Steps:

  • Preheat oven to 350 degrees F.
  • Cut top from each head of garlic, exposing the cloves. Place heads of garlic (cut side up), on a piece of heavy duty aluminum foil. Pour olive oil over them, and top with thyme springs. Season with salt and pepper. Wrap the foil tightly. Place in a small ovenproof pan, and bake until the cloves begin to pop out, about 1 hour. Remove from the oven and cool.
  • To remove the cloves, open the foil and squeeze the lower part of the head of garlic. In a small bowl, mash the cloves to form a paste. (At this point the paste can be used or stored in the refrigerator or freezer.)
  • Add butter and chopped thyme to the bowl, stirring to combine. Season with salt and pepper, to taste.
  • Toast both sides of the bread, using a hot grill, grill pan, or broiler. Spread the roasted garlic butter paste onto the toasted bread. Serve immediately.

4 heads garlic
1/3 cup extra-virgin olive oil
3 sprigs thyme, plus 1 tablespoon finely chopped
Grey salt and freshly ground black pepper
8 tablespoons unsalted butter (1 stick), at room temperature
1 loaf of good, crusty bread, cut into slices

MAKE-AHEAD GARLIC TOAST

I love this because I always have leftover bread and it goes to waste most of the time. The best part is that you can pull out as many pieces as you want and bake them straight from the freezer!

Steps:

  • Set up a grill for cooking with direct and indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only.
  • To a small saucepan over the indirect-heat side of the grill, add the garlic cloves and olive oil. Close the lid of the grill and gently simmer until the garlic cloves are roasted and soft, 12 to 15 minutes. Remove from the heat and, using a fork, mash the cloves to form a coarse paste. Add the butter, garlic powder, salt and pepper. Mix well to combine.
  • Lay the bread out on a sheet tray, cut-side up, and spoon all but 2 tablespoons of the garlic mixture over the bread. Add 1/2 cup grated Parmesan to each half. Place the sheet tray on the indirect-heat side of the grill, then close the lid and bake until crisp and the cheese has set, 3 to 5 minutes.
  • Remove from the heat, then put the 2 halves of the bread together on a piece of foil. Spoon or brush the remaining garlic butter over the top. Wrap in the foil, then place on the indirect-heat side of the grill. Close the grill and bake until golden brown and the garlic butter has soaked into the bread, another 3 to 5 minutes. To serve, open the foil, cut into smaller pieces and place on a board or platter.

1 head garlic (8 to 10 cloves), peeled
1/2 cup extra-virgin olive oil
4 tablespoons unsalted butter
1/2 teaspoon garlic powder
1/2 teaspoon kosher salt
1/4 teaspoon freshly cracked black pepper
1 loaf soft Italian bakery bread, split open
1 cup freshly grated Parmesan

Steps:

  • Preheat the oven to 400 degrees F. Cut off the top third of the head of garlic, exposing the tops of the garlic cloves. Put the garlic on a piece of heavy-duty aluminum foil and drizzle with 1 tablespoon of the oil. Sprinkle with 1/4 teaspoon each salt and pepper and add the thyme sprigs. Wrap tightly with foil and roast until the cloves are golden brown and very soft, about 45 minutes.
  • Unwrap the garlic and let stand until cool enough to handle. Pour any garlic-flavored oil from the foil pouch into a small bowl; squeeze the roasted cloves into the same bowl, discarding the papery shells. Add the remaining 1 tablespoon oil, the chopped thyme and an additional 1/4 teaspoon each salt and pepper and mash with a fork until smooth.
  • Lay the bottom half of the bread on a piece of aluminum foil that is long enough to wrap the bread. Spread on half of the roasted garlic mixture and top with half of the Parmesan. Repeat with the remaining bread, garlic mixture and Parmesan. Press the halves together so the fillings are on the inside and wrap with the foil.
  • Bake until the bread is toasted and the cheese is melted, about 15 minutes. Separate the halves, sprinkle with chopped parsley and cut into 6 pieces.

1 head garlic
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
2 sprigs fresh thyme plus 1/2 teaspoon finely chopped leaves
1/2 large baguette (about a 12-inch piece), split lengthwise
2 tablespoons grated Parmesan
2 tablespoons coarsely chopped fresh parsley

ROASTED GARLIC BREAD

I came up with this garlic bread recipe one very stormy morning when we lived on the beach in the Florida Panhandle. Meanwhile, add the sage, marjoram and rosemary to the reserved roasted garlic., Punch dough down. Turn onto a lightly floured surface; divide in half. Roll each portion into a 10-in. x 8-in. rectangle. Spread garlic mixture to within 1/2 in. of edges. Sprinkle with cheese. Roll up jelly-roll style, starting with a long side; pinch seam and ends to seal. , Coat a baking sheet with cooking spray. Place loaves seam side down on pan; tuck ends under. With a sharp knife, make several slashes across the top of each loaf. Cover and let rise until doubled, about 30 minutes., Bake at 375° for 20-25 minutes or until golden brown. Remove to wire racks; brush with butter.

Steps:

  • 1. Preheat the broiler.
  • 2. Cut the bread into slices 1 to 2 inches thick.
  • 3. In a small bowl, mix butter, olive oil, garlic, oregano, salt and pepper. Spread the mixture evenly on the bread slices.
  • 4. On a medium baking sheet, arrange the slices evenly and broil 5 minutes, or until slightly brown. Check frequently so they do not burn.
  • 5. Remove from broiler. Top with cheese and return to broiler 2 to 3 minutes, until cheese is slightly brown and melted. Serve at once.
  • My Note: I used all of these ingredients, but assembled and baked it differently. I sliced the loaf (1/2 loaf of Italian Herb Bread from this site) in half lengthwise, like splitting a roll. I spread the butter mixture on both sides, then put them together and baked, at 350 in foil for 20 minutes. Then I added the cheese and baked the bread open-faced until the cheese melted. Served with Chicken Milano from this site. I used fresh oregano. Very good- I usually make my own garlic bread but this recipe is great.
  • The only advice I have for future garlic bread makers is DON"T try to broil it on a flat pan or stone! It works best in a deep dish, that way the oils don't drip out. I loved the combination of both olive oil and butter. I used a little less oregano than called for but it, too, was a nice addition. I also added some finely chopped parsley which gave it some freshness and color. Still, I think I must stress that this will only be as good as the quality of the bread you use. Next time I might try adding a little parmesan cheese to the bread over the garlic butter, just family preference but it is definitely not needed.
