Steps:

  • Cut tofu into 1X2 inch strips; toss with 1 T cornstarch, S&P. Heat 1 T oil and cook tofu in batches until golden; drain on paper towel. Whisk broth, soy sauce, lemon juice, sambal and 1 T cornstarch. Stir fry carrots and onions in 1 T oil. Add broccolini, then scallions whites, ginger and garlic. Add tofu and sauce; stir to coat. Top with scallion greens and cilantro. Serve over rice.

1 14-oz 1 14-oz 14-oz pkg firm tofu, drained & patted dry
1 1 1 T cornstarch, divided
2 2 2 T toasted sesame oil, divided
1/2 1/2 1/2 c veg. broth
1/4 1/4 1/4 c soy sauce
1 1 1 T fresh lemon juice
2 2 2 t sambal oelek or chili garlic sauce
1-1/2 1-1/2 1-1/2 c carrots
1 1 1 onion, cut in wedges
2 2 2 bunches broccolini, cut in long florets
1 1 1 bunch scallions, bias sliced, whites/greens separated
1 1 1 T each garlic and ginger, minced
1/3 1/3 1/3 c fresh cilantro
cooked jasmine rice

TOFU SAMBAL

Seafood is usually the main ingredients for sambal (eg anchovies, prawn, fish). Usually sambal dishes have dried shrimp so if you usually get the bottled sambal from your supermarkets, do check the ingredients first. Or else, this is a simple recipe that you can try. When I make it I use frozen thawed tofu and instead of sugar and soy I use Kejap manis (but you can't get it everywhere so I have listed the sub)

Steps:

  • If using onion, cut into rings.
  • Blend garlic & shallots (together). Heat some oil in the pan/wok, add onion and the blended items.
  • Stir fry for about 2-3 minutes. Add the blended chilli Give it a stir, blending all ingredients.
  • Wait for a couple of minutes before adding the mashed tomato into the pan. Give a good mix & let the chilli and tomato cook.
  • Add soy sauce & sugar, again mix well. Finally put in tofu. Stir fry till tofu is coated with all ingredients. If you rather have the tofu soft, I suggest you put the lid on for 1-2 minutes. Ready to serve with white rice or fried rice.

  • For The Paste: Saute all the ingredients in the chili oil an once cooled grind to a creamy paste -set aside.
  • Marinate for Tofu: Mix all in a large bowl and keep aside for about 5 to 6 hours If possible marinate overnite. Heat oil in a heavy bottomed wok and fry the tofu in small batch until golden brown. Drain on paper towel and set aside.
  • (A): Heat couple tablespoon of olive oil to a heavy bottomed skillet and splutter the curry leaves and all the Indian whole spice followed by the chopped onions and tomatoes. Saute till the onions turned browned. Then add the fried tofu with the chili powder. Give a good toss and allow them to blend well for about 6 minutes. Finally add the grind paste and cover the with lid. Adjust the level of salt and once the sauce has thicken -remove from flame and transfer to a serving platter garnished with chopped coriander and spring onions.

  • Drain the tofu. Wrap each block in a double layer of paper towels and pat dry, pressing down on the tofu lightly to squeeze out excess moisture. Cut the tofu into 3/4-inch cubes.
  • In a large nonstick skillet or wok, heat the canola oil over medium-high heat. Once the oil is hot but not smoking, add the tofu (be careful, as the oil will splatter a little bit) and drizzle with 1 tablespoon soy sauce. Sauté, stirring every minute or so until the tofu is nicely colored on all sides and the moisture has cooked off, about 8 to 10 minutes. Don’t feel that you need to stir constantly. Sitting for a while on one side is what will allow the tofu to brown. Add the garlic, roughly two-thirds of the green onion, ginger, chili paste, and the remaining 2 tablespoons soy sauce. Stir and cook until fragrant, about 1 minute.
  • Add several large handfuls of spinach, stirring as you go so that it wilts and you can fit more in the pan. Once the first addition has wilted, continue to add and wilt the spinach by handfuls, until all of the spinach is added. It will seem like a ridiculous amount at first but will cook down considerably. Stir in the sesame seeds. Stir in the sesame oil. Remove from the heat. Sprinkle the reserved green onions over the top. Serve hot, with brown rice, noodles, or whatever you like, along with a few dashes of additional soy sauce and chili paste or flakes to taste.
