Steps:

  • Preheat oven to 375 degrees F.
  • Combine flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets.
  • Bake for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

TOLL HOUSE CHOCOLATE CHIP COOKIES

In the 1930s, Ruth Wakefield, the inventor of the chocolate chip cookie, ran the Toll House Inn, a popular restaurant in eastern Massachusetts, with her husband. Using an ice pick, Wakefield broke a semisweet chocolate bar into little bits, mixed them into brown-sugar dough, and the chocolate chip cookie was born. In 1939, she sold Nestlé the rights to reproduce her recipe on its packages (reportedly for only $1) and was hired to write recipes for the company, which supposedly supplied her with free chocolate for life. This recipe is very close to Mrs. Wakefield's original (hers called for a teaspoon of hot water and 1/2-teaspoon-sized cookies), and the one you'll still find on the back of every yellow bag of Nestlé chocolate chips.

Isn't this a terrific name! Yummy for breakfast. Kids love'm. And why not!! They look mighty good with some frosting drizzled over top. Basically these are drop biscuits, as in biscuits and not cookies! I came across the recipe while browsing through some of the older cookbooks in my collection. From Country Kitchen Cookbooks - Baking, 1986.

Steps:

  • Preheat over to 400. Lightly grease 2 baking sheets.
  • Sift flour, baking powder and salt into a large bowl. Cut in the butter (or margarine) until the mixture resembles fine breadcrumbs.
  • Stir in the sugar, optional orange rind and chocolate chips.
  • Using a fork, mix in the egg and just enough milk to make a moist but stiff mixture. Basically, a biscuit dough.
  • Use 2 forks. Scoop up some of the mixture with one fork and scrape off onto the baking sheet with the other fork, making small rocky heaps, well-spaced apart. Kind of like drop biscuits. Make 12-14 depending on the size you like.
  • Bake for 12-15 minutes or until risen and nicely browned. Don't overbake. Cool on a wire rack.

Steps:

  • Mix together the flour, salt and baking soda in a small bowl, set aside.
  • Cream the sugars and butter together, add the vanilla.
  • Add the eggs one at a time.
  • Slowly add the flour mixture.
  • When completely mixed, add the butterscotch chips.
  • Drop by the spoonful onto an ungreased cookie sheet.
  • Bake 8-10 minutes at 375F degrees.

  • PAN COOKIE VARIATION: PREPARE dough as above. Spread into greased 15"x10" jelly-roll pan. Bake in preheated 375-degree [Fahrenheit] oven for 20 to 25 minutes or until golden brown. Cool in pan on wire rack.
  • FOR HIGH ALTITUDE BAKING (>5,200 feet): INCREASE flour to 2 1/2 cups; add 2 teaspoonfuls water with flour; reduce both granulated sugar and brown sugar to 2/3 cup each. Bake at 375 degrees Fahrenheit, drop cookies for 8 to 10 minutes and pan cookies for 17 to 19 minutes.
