MEDITERRANEAN TOMATO BITES

My friend Mary served these lovely appetizers at a summer gathering several years ago, and I adapted it a bit to my taste. It's a great August recipe when tomatoes and herbs are at their freshest! -Susan Wilson, Milwaukee, Wisconsin

Mediterranean Tomato Bites image

Steps:

  • Preheat oven to 400°. Unfold puff pastry. Cut each sheet into 16 squares; place on parchment-lined baking sheets., Sprinkle with Gouda cheese; top with tomatoes, olives and feta cheese. Bake until golden brown, 14-18 minutes. Sprinkle with herbs. Freeze option: Cover and freeze unbaked pastries on waxed paper-lined baking sheets until firm. Transfer to freezer containers, separating layers with waxed paper; return to freezer. To use, bake pastries as directed, increasing time as necessary to heat through. Sprinkle with herbs.

Broiled Tomato Slices With Gouda Cheese image

Steps:

  • Place tomato slices on baking pan lined with non-stick foil.
  • Place some diced onions and peppers on top of each tomato slice.
  • Salt and pepper to taste.
  • Place pan under broiler and broil as long as you prefer so that onions and peppers are slightly soft.
  • Remove from oven and add a slice of Gouda cheese to each tomato slice.
  • Return to broiler until cheese is golden and bubbly.
  • Can serve hot or slightly warm.

2 medium tomatoes, sliced as you prefer
1 small sweet onion, diced
1 small sweet green pepper, diced
4 ounces gouda cheese, sliced
salt and pepper

Grilled Ham and Gouda Cheese with Caramelized Onions and Roasted Tomato Mayonnaise image

Steps:

  • Caramelized Onions:
  • Heat the butter and oil in a medium saute pan over medium heat. Add the onions and cook, stirring occasionally, until golden brown and caramelized, season with salt and pepper.
  • Roasted Tomato Mayonnaise:
  • 1. Preheat the oven to 375 degrees F. Place the tomato in a small dish or baking sheet, drizzle with oil and season with salt and pepper. Roast until the tomato is very soft and golden brown, about 20 minutes. Remove from the oven and let cool slightly.
  • 2. Put the mayonnaise, tomato, garlic and thyme in a food processor and process until smooth, season with salt and pepper. Scrape into a bowl.
  • Sandwich:
  • 1. Place 4 slices of the bread on a flat surface, divide half of the cheese among the slices. Top the cheese with 2 slices of prosciutto then top the proscuitto with some of the onions and the remaining cheese. Place the 4 remaining slices of bread on top to make four sandwiches. Butter the top of the bread using half of the butter.
  • 2. Preheat a cast iron pan or cast iron griddle over medium heat. Place the sandwiches in the pan, butter-side down (may need to do in batches) and cook until lightly golden brown. Spread the remaining butter on the bread facing up, then flip and continue cooking until the bottom is golden brown and the cheese has melted. Serve with roasted tomato mayonnaise on the side.

1 tablespoon unsalted butter
1 tablespoon olive oil
1 large Spanish or sweet (Vidalia) onion, halved and thinly sliced
Salt and freshly ground black pepper
1 plum tomato, halved and seeded or 2 sun-dried tomatoes in oil, drained and patted dry
1 tablespoon canola oil (if roasting tomato)
Salt and freshly ground black pepper
1/2 cup Hellmann's mayonnaise
2 cloves garlic, chopped
2 teaspoons fresh thyme leaves or 1/2 teaspoon dried thyme
8 slices good quality white bread (Pullman loaf) cut into 1/4-inch thick slices
1 1/2 cups grated Gouda cheese
Caramelized onions
8 slices prosciutto, sliced about 1/8-inch thick
8 tablespoons unsalted butter, at room temperature

Tomato and Smoked Gouda Pizza image

Steps:

  • Preheat oven to 450°.
  • Roll the dough into a 12-inch circle on a lightly floured surface. Place dough on a (12-inch) pizza pan or baking sheet coated with cooking spray and sprinkled with cornmeal. Crimp edges of dough with fingers to form a rim. Bake at 450° for 5 minutes.
  • Sprinkle cheese over pizza crust, leaving a 1-inch border. Arrange the tomato slices over cheese. Combine oil and garlic; sprinkle over tomato. Sprinkle with pepper.
  • Bake at 450° for 15 minutes or until lightly browned. Top with basil. Cut into 8 wedges.

  • Heat the oil in a medium skillet over medium high. Add the sliced onions, and season with a pinch of salt and the dried thyme. Sauté for about five minutes, until they’ve softened, and you’re getting some good color on them.
  • Roll the pie crust out on a large baking sheet. Sprinkle half the gouda cheese in the center of the crust, leaving about 3 inches untouched on the outer rim. Layer the onions over the cheese, and follow with the rest of the grated cheese on top of the onions. Arrange the tomato slices on top of the cheese, overlapping in a circle. Season the tomatoes with a pinch of coarse salt. Now, fold the edges of the pie crust over itself, forming a pretty galette crust. Brush the exposed crust with the egg wash, and bake for 30 minutes!
  • Let sit on the baking sheet for about 5 minutes, then gently transfer the galette to a cutting board or platter. Garnish with basil, maybe a grind of black pepper, slice and serve! YOU WILL FREAK OUT.
