Steps:
- Bring a large pot of water to a boil. Season aggressively with salt. Add the rigatoni and cook 3 minutes less than the package directions. Reserve 1/2 cup pasta water and drain.
- Meanwhile, preheat the oven to 400 degrees F and line a baking sheet with parchment paper.
- Toss the eggplant and tomatoes with 3 tablespoons olive oil and sprinkle with salt and pepper. Spread on the baking sheet and roast until the eggplant is golden brown and tomatoes are tender, 25 to 30 minutes. (Leave the oven on.)
- Toss the rigatoni with the eggplant, tomatoes, about 1/4 cup pasta water and the marinara sauce in a large bowl. If it looks dry, add the remaining pasta water. Stir in 1 cup mozzarella.
- Spray a 9-by-13-inch baking dish with nonstick spray. Transfer the pasta to the baking dish and top with the remaining cup mozzarella and the Parmesan and drizzle with the remaining tablespoon olive oil. Bake until the cheese is melted and golden brown, 20 to 25 minutes. (Turn the broiler on at the end if you want the cheese to brown more.) Garnish with additional Parmesan and the chopped basil and serve.

Steps:
- First skin the tomatoes - put the tomatoes in a bowl and pour boiling water over them and leave for 1 minute, then drain and slip off their skins.
- Reserve 3 tomatoes for later and roughly chop the rest.
- Heat the oil in a medium saucepan, then add the onion and garlic and let them gently cook for 5-6 minutes, until they are softened and light golden in colour.
- Add the chopped tomatoes with about a third of the basil, torn into pieces and season with salt and freshly milled black pepper.
- Let the tomatoes simmer on a very low heat, without a lid, for about 1-1½ hours or until the tomatoes are reduced to a thick sauce, stirring now and again.
- Roughly chop the reserved tomatoes and stir them in, along with the rest of the torn basil leaves and take it off heat.
- Cook the pasta as per the package instructions.
- When you are ready to eat, gently re-heat the tomato sauce and stir the cubes of mozzarella into the warm sauce and let it simmer gently for 2-3 minutes only to slightly soften the cheese (just begun to melt).
- Serve the sauce spooned over the drained pasta, sprinkled with the parmesan (if using) and add a few basil leaves as garnish.

TOMATO AND MOZZARELLA SAUCE WITH PASTA
Wow! This is the best use of fresh garden tomatoes I can think of. I absolutely loved this. I cooked this recipe, but I wonder now if it's supposed to be uncooked. I left my tomatoes chopped but with the seeds and the skin on. Recipe courtesy of America's Best Recipes 1990 and The Women's Art Guild, Laguna Gloria Art Museum of Austin, Texas.

- Chop tomatoes into a medium dice. Add 1/2 tsp of salt and half of the minced basil to the diced tomatoes. Stir to combine and let it sit as you prep the other ingredients and bring the water to a boil.
- Bring a large pot of water to a boil. Add pasta and bouillon. Cook pasta according to package instructions.
- While the pasta is cooking, heat a large sauté pan over medium high heat. Add the olive oil to the pan. Next add the minced garlic and stir the garlic to cook for 30 seconds. Don’t let it burn.
- Using a fine mesh sieve, strain the tomatoes over the sauté pan, so the tomato juice flows directly into the sauté pan. You want to add all the tomato juice to the garlic cooking in the sauté pan. Set the tomatoes aside and cook the tomato juice over medium high heat for a minute or two until the tomato juice thickens slightly.
