FRESH TOMATO SAUCE

This is a fresh and delicious pasta sauce that is very simple to make. It is great to make in the summer when there is an abundance of fresh vegetables.

Fresh Tomato Sauce image

Steps:

  • In a large saucepan, heat oil over medium heat; add tomatoes, onions, green bell peppers, garlic, white wine and salt and pepper to taste.
  • Mix ingredients well; cover and simmer for 30 minutes. Serve.

Steps:

  • brown the sausage in a large pot on medium heat. use a potato masher to break it up.
  • add the diced onions and garlic and saute until the onions are translucent.
  • reduce heat to low and melt the tomato paste in and stir in the spices until fragrant.
  • add the wine and bring to a simmer.
  • when the wine has reduced to about 1/2 add the tomato sauce and cook on low for 30 min-all day if you want!
  • works great with pasta, lasagna, pizza, anything!

1 onion, diced
4 garlic cloves, chopped
1 cup red wine, something good enough to drink a glass of
1 tablespoon tomato paste
1/2 teaspoon red pepper flakes (or less if you don't like too much spice)
1 teaspoon oregano
2 tablespoons chopped fresh basil or 2 teaspoons dried basil
1 teaspoon parsley
2 (32 ounce) cans tomato sauce
salt
fresh cracked pepper

This delicious tomato and meat sauce can be used for spaghetti or lasagna. The pepperoni gives this sauce an extra kick.

Steps:

  • In a medium skillet over medium heat, warm oil and saute onions and garlic until caramelized; set aside.n
  • In a large skillet over medium heat, cook ground beef until almost browned. Add onions and garlic and cook for 3 minutes.n
  • In a large pot over medium heat, combine tomato sauce and stewed tomatoes; bring to a boil and then reduce heat. Simmer sauce for 15 minutes.n
  • Stir pepperoni, ground beef mixture and green peppers into sauce; cover and simmer for 30 minutes.n
  • Stir in mushrooms, garlic salt, salt, ground black pepper, onion powder, oregano and Italian seasoning. Simmer for 10 minutes and serve.n

  • In medium-sized saucepan, heat butter over medium-low heat. Add onion and saute for 5 minutes, but do not allow them to brown.
  • Stir in ketchup, sugar, Worcestershire sauce, mustard, vinegar. Bring to a boil; reduce heat and simmer, stirring occasionally, for 5 minutes.
  • Divide into jars, cool and freeze or refrigerate for 2 to 3 weeks.

Roasted Pepper and Tomato Sauce With Kick! image

Steps:

  • Saute onions in butter or oil over medium heat for several minutes until soft.
  • Add brown sugar and a dash of salt, continue to cook until they begin to caramelize, reducing heat as needed to avoid burning.
  • Add roasted red pepper, garlic and tomatoes, break up gently with spoon.
  • Add spices, chili peppers (optional) and lemon juice, allow to simmer gently for a few minutes until flavours are merged and liquid has begun to evaporate slightly. Add salt and pepper to taste.
  • Stir in cooked pasta and cilantro, toss well.
  • Serve!

I just made this up on a whim, and it turned out fantastic. It's a nice light pasta sauce that is offset by rich bacon and a tiny Tabasco kick. I personally had it with toasted garlic bread and a balsamic vinaigrette salad and it was the perfect sized meal. My husband approved.

Bacon & Tomato Pasta With a Kick image

Steps:

  • Put water on to boil in pot with table salt, (for pasta).
  • Put diced tomatoes in a bowl. Squeeze lemon over top. Add in coarse ground salt, black pepper, red pepper flakes, and parsley. Stir up to mix flavors.
  • Heat olive oil on medium/high for a couple minute on a pan. Once pan is hot, adjust temperature down to medium and add garlic and bacon pieces. Fry for about 3 minutes.
  • Pour tomato mixture into pan. Add in 1 tsp Tabasco sauce & stir thoroughly. Cover and turn temperature down to medium/low. Let simmer for approximately 6-8 minutes.
  • Add pasta to boiling water. Cook until al dente. Drain. Put in serving bowl.
  • Add sauce to pasta. Stir and serve!
