Steps:

  • In a small bowl, whisk the marmalade, vinegar, sesame oil and ginger; set aside., Cook edamame according to package directions, adding the snow peas during the last minute of cooking. Drain and rinse in cold water. Place in a large bowl. Stir in the black beans, red pepper and green onions. Add the marmalade mixture, mandarin oranges, salt and pepper; toss to coat.

Steps:

  • Heat dressing in large skillet on medium-high heat. Add onions, garlic and seasoning; cook 3 min., stirring occasionally. Add zucchini; cook and stir 4 to 5 min. or until crisp-tender.
  • Stir in snow peas and tomatoes; cook 2 to 3 min. or until heated through, stirring occasionally.
  • Sprinkle with cheese; cover. Remove from heat. Let stand 1 min.

Tossed Snow Peas & Zucchini image

Steps:

  • 1. Place peas in a vegetable steamer over hot water.
  • 2. Cover, steam 2 minutes or until crisp tender.
  • 3. Drain and rinse under cold water.
  • 4. Combine peas, zucchini, tomatoes and pine nuts in a medium bowl.
  • 5. Combine shallots, vinegar, oil and pepper; mix well with a wire whisk.
  • 6. Pour over vegetables and toss gently to mix well.
  • 7. Cover and chill thoroughly for atleast 15 minutes.

1/2 c fresh snow peas, cut into 1" diagonal pieces
1 small zucchini, thinly sliced

1 Tbsp pine nuts, toasted

Stir-Fried Snow Peas With Soba image

Steps:

  • Heat the peanut butter for 10 seconds in a microwave to make it easier to mix. Combine with the soy sauce, vinegar, hot red pepper oil, cayenne, half the garlic and ginger, salt and pepper. Whisk together. Whisk in the sesame oil and broth. Set aside.
  • Heat the canola or peanut oil in a wok or a large, heavy skillet over medium-high heat, and add the snow peas. Stir-fry for one to two minutes, and add the scallions and remaining garlic and ginger. Stir-fry for 20 seconds, and add the tofu (if using). Stir-fry for one to two minutes, then stir in the noodles and sauce. Toss together until the noodles are hot, and remove from the heat. Add the radishes and cilantro, stir together, and serve.

Steps:

  • Put vegetable oil in a wok over high heat. When oil looks wavy, add chiles and let sizzle for a few seconds.

Found this recipe on one of those grocery recipe cards from the produce section. This is a very different twist on an Asian dish in my opinion by using the black beans with the snow peas and edamame (baby soybeans). I could not find seasoned rice vinegar so I used plain rice vinegar...maybe I don't understand what they are calling for with that ingredient.

Twisted Snow Pea Toss image

Steps:

  • Stir together marmalade, oil, vinegar and ginger and set aside.
  • In a large bowl combine the black beans, bell pepper and green onions and set aside.
  • Cook edamame in large pan of boiling water according to package directions. Add snow peas to pan during the last 2 minutes of cooking. Drain and rinse with cold water.

  • Add the onions to the empty skillet and saute over medium heat. Add 1-2 tablespoons of water, cover with lid and steam them for a minute or two. Add the zucchini and snap peas. Sprinkle with salt and pepper. Cover with lid, stirring occasionally and steam/saute until vegetables are tender, but still crisp. This should only take a few minutes. Taste vegetables and adjust salt and pepper if necessary.
  • Add the mushrooms back into the skillet and toss to combine. Add the softened butter and toss gently to coat the vegetables. Sprinkle the basil over the vegetables and toss gently. Enjoy!
