TRIPLE CHOCOLATE BROWNIES

Triple Chocolate Brownies image

Steps:

  • Preheat the oven to 350 degrees F.
  • Melt the butter and dark chocolate together in a large heavy based pan over a low heat.
  • In a bowl or large measuring jug, beat the eggs together with the superfine sugar and vanilla extract.
  • Allow the chocolate mixture to cool a little, then add the egg and sugar mixture and beat well. Fold in the flour and salt. Then stir in the white chocolate buttons or chips, and the semisweet chocolate buttons or chips. Beat to combine then scrape and pour the brownie mixture into the prepared tin.
  • Bake for about 25 minutes. You can see when the brownies are ready because the top dries to a slightly paler brown speckle, while the middle remains dark, dense and gooey. Even with such a big batch you do need to keep checking on it: the difference between gooey brownies and dry ones is only a few minutes. Remember, too, that they will continue to cook as they cool.
  • To serve, cut into squares while still warm and pile up on a large plate, sprinkling with confectioners' sugar pushed with a teaspoon through a small sieve.

12 ounces best-quality bittersweet chocolate

1 3/4 cups superfine sugar
1 tablespoon pure vanilla extract
1 1/2 cups plus 2 tablespoons all-purpose flour
1 teaspoon salt
1/2 cup white chocolate buttons, chips, or morsels
1/2 cup semisweet chocolate buttons, chips or morsels
Approximately 2 teaspoons confectioners' sugar, for garnish
Special equipment: Baking tin (approximately 11 1/4 inches by 9 inches by 2 inches), sides and base lined with baking parchment.

Steps:

  • In a large microwave-safe bowl, melt butter and chocolate; stir until smooth. Stir in sugar. Add eggs, one at a time, beating well after each addition. Stir in vanilla, flour and salt. , Pour into three greased and floured 9-in. round baking pans. Bake at 350° for 23-25 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes; remove from pan to a wire rack to cool completely., For frosting, melt chocolate in a heavy saucepan over medium heat. Gradually stir in cream and sugar if desired, until well blended. Heat to a gentle boil; boil and stir for 1 minute. Remove from the heat; transfer to a large bowl. Refrigerate for 2-3 hours or until mixture reaches a pudding-like consistency, stirring a few times. , Beat until soft peaks form. Immediately spread between layers and over top and sides of cake. Sprinkle with shaved chocolate. Store in the refrigerator.

Steps:

  • Heat oven to 350°F. Grease and flour 13x9-inch pan. In 2-quart saucepan, heat butter and baking chips over low heat, stirring frequently, just until melted. (Mixture may appear curdled.) Remove from heat; cool.
  • Stir in remaining brownie ingredients until well blended. Spread evenly in pan.
  • Bake 30 to 35 minutes or until toothpick inserted in center comes out clean. Cool completely.
  • In medium bowl, mix all glaze ingredients until smooth and spreadable. Spread glaze over brownies. For brownies, cut into 8 rows by 4 rows.

Warning. This could be addictive, and you don't need a large square. I found this recipe in Quick Cooking, and co-workers gobbled it up and asked for the recipe -- so I thought I would post it here for others to try. Cooking time includes cooling time.

  • Prepare and bake brownie mix according to directions, using a greased 13 x 9" baking pan. Cool on a wire rack.
  • Spread the cream cheese frosting over the brownies.
  • Sprinkle with chopped peanuts.
  • In a large saucepan, combine the chocolate chips and peanut butter. Cook over LOW heat for approximately 4-5 minutes or until blended, stirring occasionally. Remove from heat and stir in cereal. Spread over the cream cheese frosting and chopped peanuts.
  • Chill for 30 minutes or until set before cutting.
  • Store in refrigerator.
  • NOTE: I used a dark chocolate fudge brownie mix, and I also had only half of the milk chocolate chips required so I used semi-sweet chips for the remainder.

  • Preheat oven to 350 degrees. Lightly butter a 9-inch square baking pan and line with parchment paper, leaving a 2-inch overhang on all sides. In a large microwave-safe bowl, combine butter, bean puree, and chocolates and microwave in 30-second increments, stirring each time, until melted and smooth, about 2 minutes. Whisk in sugar, eggs and egg white, and vanilla until smooth.
  • In a small bowl, whisk together flour, cocoa powder, baking powder, and salt. Stir into chocolate mixture until just combined. Pour batter into pan; smooth top. Bake until top is cracked and a toothpick inserted in center has moist crumbs attached, about 25 minutes (center will seem undercooked but will set further as it cools).
