CARROT TEA CAKE

Using a pastry mold to bake this walnut-studded carrot cakeyields beautiful results without a lot of effort.

Steps:

  • Preheat oven to 350 degrees. Butter a 9-inch (5-cup) trois freres mold or Bundt pan. Dust with flour, and tap out excess. Put butter and brown sugar into the bowl of an electric mixer fitted with the paddle attachment. Mix on medium-high speed until pale and fluffy, about 3 minutes.
  • Add eggs, one at a time, mixing well after each addition. Add vanilla and carrots, and mix until just combined. Reduce speed to low. Add flour, baking powder, salt, and baking soda. Mix until just combined. Stir in walnuts.
  • Pour batter into the prepared mold. Bake until a cake tester inserted into center comes out clean, about 30 minutes. Let cool in pan on a wire rack 15 minutes. Turn out cake onto rack, and let cool completely. Before serving, dust with confectioners' sugar.

10 tablespoons (1 1/4 sticks) unsalted butter, softened, plus more for mold
1 1/4 cups all-purpose flour, plus more for mold
1/2 cup plus 2 tablespoons packed light-brown sugar
2 large eggs
1 1/2 teaspoons pure vanilla extract
1 cup packed peeled grated carrots (4 to 5 carrots)
1 teaspoon baking powder
1 teaspoon coarse salt
1/2 teaspoon baking soda
1/2 cup walnuts, toasted, finely chopped
1 teaspoon confectioners' sugar

PIERRE'S SALMON WITH SORREL

This recipe for a tasty salmon dinner comes to us courtesy of Pierre Troisgros, one of only three French chefs whose restaurants have received three stars in the Michelin Guide for more than thirty consecutive years.

Pierre's Salmon with Sorrel image

Steps:

  • Choose the thickest center section of the fish. Using a flexible boning knife, cut apart the two fillets, and carefully remove skin.
  • With pliers, pull out the tiny bones hiding in the center of the flesh. They can be found by running fingers against the grain of the fish. Divide the fillets in half horizontally to make four pieces weighing about 6 ounces each.
  • Lightly oil two pieces of parchment paper with peanut oil. Lay one piece of parchment on a flat surface. Place fish on parchment. Top with second piece of parchment. With a wooden mallet or the side of a cleaver, gently flatten so each fillet is of equal thickness.
  • In a medium saucepan, combine fish stock and shallots. Bring to a boil, and cook until reduced to a glaze, 10 to 15 minutes. Add wine and vermouth, and continue to cook until bright and syrupy, about 3 minutes. Add creme fraiche, and boil until slightly thickened, about 2 minutes. Pass through a fine mesh sieve into a clean pan.
  • Add sorrel, and cook for 25 seconds. Remove from heat. Add butter a little at a time, swirling or stirring with a wooden spoon until completely incorporated (be sure not to break up sorrel leaves). Season with lemon juice, salt, and pepper.
  • Heat a large nonstick skillet over medium-high heat. Season salmon on one side (the less presentable side) with salt and pepper. Place in pan, seasoned side up. Cook 25 seconds, turn, and cook 15 seconds more. The salmon must be undercooked to preserve its tenderness (it will continue to cook in the finished sauce).
  • Distribute sauce among four large plates. Place salmon, seasoned side down, on plates. Season with salt. Serve immediately.

2 pounds salmon
1 tablespoon peanut oil, for pounding
2 cups Pierre's Fish Stock
2 medium shallots, finely chopped
1/3 cup dry white wine, preferably Sancerre
3 tablespoons dry vermouth
1 1/4 cups creme fraiche
4 ounces sorrel leaves (about 1 quart tightly packed), washed, stemmed, and large leaves torn into two or three pieces
4 tablespoons (1/2 stick) unsalted butter, cut into small pieces
Freshly squeezed lemon juice
Coarse salt and freshly ground white pepper

Gateau Trois Freres ( Three Brothers Cake ) image

Steps:

  • Preheat oven to 375 degrees F.
  • Grease a five-cup ring mold with non-stick spray. (It is not essential that you use a Trois Freres mold ) Beat egg yokes and 1/2 cup sugar in a large bowl until they are thick, pale and smooth (about 5 minutes). Add 1 egg white ( a scant 1/4 cup) to yoke mixture and beat inches With clean, dry beaters and in a separate bowl, beat remaining egg whites until they form stiff peaks. Beat in remaining 2 tablespoons sugar to fortify and gloss the peaks. Sift and stir rice flour into yoke mixture. Stir in extract followed by a third of the egg whites (use a plastic or wooden spatula) Gently fold in remaining egg whites. Gently fold in melted butter. Pour batter evenly into lightly browned and a skewer inserted in cake tests clean. Remove from oven and let cool for 10 minutes. Invert cake onto cooling rack . Let cool completely before brushing cake with warm jam, dusting with toasted crushed almonds and pressing candied pieces into top and sides. Cake is best served same day it is baked but keeps well under plastic bowl at room temperature.

Steps:

  • Place the hominy, green beans, squash, and potatoes into a pot, and pour in water and chicken bouillon. Bring to a boil, then reduce heat to low, and simmer until vegetables are soft, about 10 minutes. Blend flour into the butter, then stir into the soup. Increase heat to medium, and cook for 5 more minutes, or until soup thickens. Season with pepper, and serve.
