TROPICAL BANANA NUT PARFAITS
Layered fruit, yogurt and Banana Nut Cheerios® cereal make a 15-minute quick and good-for-you treat.

Steps:
- In each of 4 parfait glasses, alternate layers of yogurt, cereal, banana and strawberries.
- Top each serving with coconut. Serve immediately.

TROPICAL FRUIT PARFAIT
Steps:
- In a small bowl stir together yogurt, lime juice, and cayenne pepper; set aside.
- Spoon 1/4 of drained fruit into the bottom of 2 wine or parfait glasses. Add 1/4 of the banana. Spoon 1/4 cup yogurt mixture over fruit and top with 1/4 cup of granola. Repeat layers.
- Serve immediately garnished with a sprig of fresh mint.
TROPICAL LIME PARFAITS
Ree's parfaits consist of layers of crumb followed by a mix of fluffy whipped cream cheese and heavy cream. The addition of coconut chips and extract, plus lime, gives the parfaits a truly tropical flavor.

Steps:
- For the crumb: Combine the graham cracker crumbs, sugar, butter, coconut chips and lime zest in a bowl. Mix to combine.
- For the filling: Using an electric mixer, beat the cream cheese, heavy cream, powdered sugar, coconut extract and lime zest and juice in a large bowl until light and fluffy.
- Begin by layering 1/4 cup of the crumb in the bottom of each of 4 parfait glasses. Top each with 1/3 cup of the filling. Repeat the layers once more, then garnish with extra toasted coconut and lime zest.

Found this healthy dessert in the February 2008 Sunset Magazine. Adapted and then shared by a much appreciated lady by the name of Sarah Abrevaya Stein from a dish her mother used to make. (Give credit where it's due, no?) Very easy and tasty, too!

Steps:
- Preheat oven to 375. Spread coconut on a baking sheet. Bake until toasty brown, 3 to 5 minutes. (Watch carefully so it doesn't burn!).
- Peel bananas, cut into 1/4-in. thick slices, and put slices in a bowl. Finely shred zest from the lime over the banana slices. Juice the lime and toss juice with banana slices.
- Divide 1/2 the banana slices among four parfait glasses or small glass bowls,lifting bananas out of the lime juice with a fork or slotted spoon. Top bananas in each glass with 1/4 Cup sorbet and sprinkle with 1 T. coconut. Repeat to make a second layer in each parfait. Serve immediately.
