- Stir peas into rice pouch. Heat in microwave according to package directions.
- Meanwhile, in a large skillet, cook and stir chicken in hot oil over medium-high heat for 2 to 3 minutes or until no longer pink. Stir rice mixture into skillet. Stir in stir-fry sauce; heat through. Sprinkle each serving with almonds.

This is a creamy chicken and rice recipe that I cook on the tugboat for the crew. The chicken should be moist and tender when done.

Steps:
- Cut off fat and rinse off chicken pieces.
- Mix rice, water, cans of soup and milk together in a baking pan.
- Place the chicken on top of rice mixture.
- Sprinkle the dry onion soup mix on top of the chicken, or just use salt and pepper as desired.
- Cover with foil and bake at 350 degrees for one hour.
- Remove foil for the last 10 minutes.

Steps:
- Pour BBQ Sauce into pan, fill the empty bottle with tap water (or something fancier if you're"that way") and pour about half of it into the pan as well.
- Stir until blended over low-medium heat.
- Add thawed chicken.
- Cook chicken and sauce while stirring over medium heat until chicken is done, then turn down to low.
- Keep an eye on it and add more water from the bottle if needed.
- For rice, just add rice and water to a pan with a tight-fitting lid, bring to a boil, stir for a minute, and cook at medium heat for 30 minutes while COVERED.
- when everything's done, pile it on a plate and eat it up.
- Sometimes I add a dash or two of"Kick-Yo-Ass" hot-sauce for a little spice.
SPANISH CHICKEN AND RICE
This chicken is great because you throw it all together in a pot & let it cook until the chicken is so tender, it's almost falling off the bone. Remove skin from chicken before cooking for a healthier dish.

Steps:
- Heat 2 tablespoons of the oil in a large pot.
- Season the chicken pieces with salt & pepper and brown in batches.
- Remove from pot.
- Add the remaining oil to the pot & gently saute the onion & capsicum until the onion is transparent.
- Stir in the paprika and cook for 30 seconds.
- Add the tomatoes and simmer gently until it has thickened.
- Stir in the water, then add the rice and the tumeric.
- Return the chicken to the pot and stir to combine.
- Bring to the boil, cover, reduce heat to low and simmer for about 1 hour or until chicken is tender and almost falling off the bone.

- In a large saucepan melt butter over medium heat and add chicken.
- Brown on all sides then remove from pan and set aside.
- Add onion and tomato and saute until onion turns translucent.
- Stir in oregano and lemon juice.
- Add rice and stir well to combine and coat all grains of rice.
- Add chicken stock, stir and return chicken to pot.
- Bring to a boil, reduce heat and simmer, uncovered, until all surface liquid has been absorbed.
- Cover, turn heat to very low and cook 1 hour, stirring every 15 minutes to keep rice from burning or sticking.

YIAYIA'S CHICKEN AND RICE
I grew up with this recipe and because I make it often never realized how simple this would be for others to make. It is a favorite in our house, hope it becomes one in yours. It is a one dish wonder! amounts can vary for taste or serving size. I make extra even though only 3 of us here so I have it for lunch or leftovers. Freezes well.

- mix rice, broth, seasoning, and garlic together in 9 x 13 casserole dish.
- place chicken pieces on top if rice mix.
- cover with foil and bake at 350 degrees for 1 hr or ntil chicken comes out without pink.
- THIS WILL VARY DEPENDING ON THE THICKNESS OF YOUR CHICKEN PIECES.
- Check oven after 45 min and then adjust time to suit.
