Tuna Mousse: Spuma di Tonno image

Steps:

  • Put the tuna in a food processor and pulse to break up the fish. With the machine running, add the butter, cream, balsamic vinegar, and soy sauce and blend until smooth. Then stop the machine and scrape down the sides of the processor bowl. Add the lemon juice and pulse again. Season, to taste, with salt and pepper and blend again. Check the seasoning.
  • Serve at room temperature, or cover and refrigerate for up to 4 days. If refrigerated, return the spuma to room temperature before serving.

1 can (7 ounces or 200 grams) imported olive oil-packed tuna, drained
1 tablespoon, plus 1 teaspoon unsalted butter, at room temperature
1 tablespoon heavy cream

Shrimp croquettes (Croquettes de crevettes) image

Steps:

  • Peel and devein the shrimp. Chop them finely. There should be about two cups. Set aside.
  • Melt the butter in a saucepan and add the onion. Cook until wilted, stirring with a wire whisk. Add three tablespoons of the flour and the paprika, stirring. Add the milk and shrimp liquid, stirring rapidly with the whisk.
  • When thickened and smooth, continue cooking about two minutes. Add the chopped shrimp, egg yolks and sherry. Cook briefly about 30 seconds, stirring.
  • Add half of the bread crumbs, salt and pepper to taste and the cayenne. Blend well. Let stand until thoroughly cooled.
  • Divide the mixture into 16 equal portions. Shape each portion into a ball. Roll the balls in the remaining one-quarter cup of flour. Mold them into the desired form: spheres, cylinders, pyramids or flat cakes.
  • Beat the egg with the water. Roll the croquettes in the egg mixture and then in the remaining bread crumbs. Press to help crumbs adhere. Shake off excess.
  • Heat the oil for deep frying. Add the croquettes a few at a time and cook about four minutes or until golden brown. Serve, if desired, with Newburg sauce.

Tuna And Salmon Patchwork With A Gazpacho Mousse image

Steps:

  • Combine the oil and chilies and let stand at least 24 hours.
  • When ready to prepare this dish, place four round cookie-cutter molds, each about one-and-one-half inches in diameter and one-and-one-half inches in height, on a flat surface with the sharp edges up.
  • Cut enough of the salmon into small cubes to make four tablespoons. Cut enough of the tuna into small cubes to make four tablespoons. Place the cubes in a small bowl and add the lime juice, sour cream and salt and pepper to taste. Blend well and set aside.
  • Cut the remaining salmon on the bias into very thin slices. Arrange one slice at a time over the upper edges of one mold covering the inside bottom of the mold and slightly overlapping at the top. Let the slices hang over the edges. Use only enough slices to line the mold. Line the other three.
  • Spoon one-quarter teaspoon of the caviar inside each of the salmon-lined molds. Spoon equal portions of the cubed fish mixture on top of the caviar. Fold over the overhanging bits of the salmon slices to enclose the filling and cover the top of each mold neatly. Unmold each serving on large, white dinner plates.
  • Cut the remaining salmon and tuna into very thin slices. Arrange equal portions of the tuna and salmon slices, edges slightly overlapping, in a neat pattern in the center of the plate.
  • Unmold one portion of gazpacho mousse onto each plate, opposite the filled salmon molds.
  • Put the mustard and vinegar in a small mixing bowl and start beating with a wire whisk. Remove the hot chilies from the oil and beat the oil into the sauce. Add salt, pepper, cucumber, sweet red pepper and scallion. Blend well. Spoon equal portions of the sauce over the salmon and tuna slices. Garnish each serving with salad leaves.

  • Remove the meat from the chicken. Discard the skin and bones.
  • Chop the chicken meat finely. There should be about two and onehalf cups. Set aside.
  • Melt the butter in a saucepan and add the onion and garlic. Cook, stirring, until onion is wilted and sprinkle with the six tablespoons of flour. Stir with a wire whisk. Add the chicken broth and cream, stirring vigorously with the whisk. Add the yolks and cook about 30 seconds, stirring. Add the cayenne, nutmeg, salt and pepper to taste and one-half cup of the bread crumbs.
  • Combine the chopped chicken meat with the sauce. Blend well. Set aside until thoroughly cooled.
  • Divide the mixture into 16 equal portions. Shape each portion into a round. Roll the rounds in the remaining one-quarter cup of flour. Shape the rounds into any desired shape: pyramids, cylinders, spheres, or flat cakes.

  • Trim off the root end of the leeks. Split the leeks in half and rinse well between the leaves. Pat dry. Cut the leeks into very small dice. There should be about two cups.
  • Trim the celery and cut it into small dice. There should be about two cups.
  • Trim off the ends of the green beans and cut them into small dice. There should be about two cups.
  • Trim and scrape the carrots. Cut them into one-quarter-inch slices. Stack the slices and cut them into one-quarter-inch strips. Cut the strips into one-quarter-inch dice. There should be about one and one-half cups.

  • Combine gelatine and 100 ml water in a bowl placed over a container of boiling water and mix until dissolved.
  • In a separate pan bring the soup to a boil and stir until thickened.

  • Pick over the spinach and remove and discard any tough stems or blemished leaves. Rinse and drain the spinach well.
  • Bring enough water to the boil to cover the spinach when added. Add the spinach and cook, stirring occasionally, about three minutes. Drain thoroughly and press to extract any excess liquid. Put the spinach into the container of a food processor or electric blender and blend briefly.

  • Shuck the clams and reserve the clams and the juice. There should be about one cup of clams and one and one-half cups of juice.
  • Put the clams on a flat surface and chop them finely.
  • Bring the water to the boil, and add one-half cup of the clam juice and salt.
  • Add the spaghetti to the kettle and let it boil as the sauce is prepared. Cook the spaghetti to the desired state of doneness. We prefer it al dente.
  • Add the oil to a small skillet and heat it. Add the remaining clam juice to another skillet or casserole large enough to toss the spaghetti in sauce once it is added. Drain the spaghetti and add it to the clam juice. Add the cream and stir. Let heat slowly as you prepare the sauce.
  • Add the clams, garlic and parsley to the oil and heat for about 30 seconds or until thoroughly hot. Do not cook. Pour and scrape this over the spaghetti and add the butter. Toss. Add the Pernod or Ricard and serve immediately.

BEGGAR'S CHICKEN

Here is a traditional recipe from Hangzhou, a Chinese city long known for its gorgeous scenery and place in the Southern Song Dynasty. From that era comes this chicken, which is stuffed with a savory pork mixture and then encased in clay before baking. The clay lends the chicken an unearthly tenderness. This is a weekend project, yes, but one well worth tackling.

Beggar's Chicken image

Steps:

  • Rub the chicken inside and out with salt, half of the soy sauce and half of the wine. Set aside for at least one hour.
  • Meanwhile, put the mushrooms in a small mixing bowl and add warm water to cover. Let stand half an hour or until the caps are softened. Drain and squeeze to extract and discard excess moisture. Cut off and discard the tough stems. Cut the caps into thin slivers and set aside.
  • Preheat the oven to 350 degrees.
  • Cut the preserved vegetable into thin slivers. If it has been packed in a shredded state, shred it further. Set aside.
  • Heat the oil in a wok or skillet and add the pork. Cook, stirring rapidly, until it loses its raw look. Add the mushrooms, preserved vegetable and bamboo shoots. Add the remaining soy sauce, remaining wine, salt and sugar. Cook, stirring, one minute. Set aside to cool.
  • Stuff the mixture inside the chicken.
  • Fold the wing tips under the chicken. Truss the chicken as neatly as possible with string.
  • Lay out a large rectangle of aluminum foil on a flat surface. Place the chicken in the center. Wrap the chicken as compactly as possible inside the foil.
  • Gather together a large handful of the clay. Flatten this handful to a thickness of about one inch and apply it to one outside section of the foil-wrapped chicken. Place another flattened handful of clay slightly overlapping and press to seal the two pieces together. Continue applying handfuls of clay, pressing as you work, until the chicken is completely and compactly covered with clay. Smooth the clay over as you work. You may bake the chicken at this point or you may ''sculpt'' the product with additional pieces of clay, shaping it to resemble a whole bird with beak, feet, eyes, tail feathers and so on.
  • Place in the oven and bake 45 minutes. Increase the oven temperature to 400 degrees. As the clay bakes, it may develop cracks. As these are noticed, seal the cracks by smearing on a little more clay.
  • Continue baking the chicken for 30 minutes. If desired, you may then paint the clay with poster paint or watercolors.
  • To serve, crack the clay, remove the chicken and peel away and discard the foil. Carve the chicken and serve with the preserved-vegetable stuffing.

  • Bake the tomatoes according to instructions. Or you may use one and three-quarter cups of drained, chopped canned tomatoes.
  • Meanwhile, sprinkle the chicken pieces with salt and pepper, and set aside.
  • Split each lobster in half crosswise at the point where the tail and body meet. Cut the tail piece crosswise into three or four pieces. Crack the claws. Cut the body pieces in half lengthwise. Arrange the tail pieces, cracked claws and the body halves in a dish. Sprinkle with salt and pepper.
  • Heat the oil in a large heavy casserole and add the lobster pieces. Cook, stirring, over high heat about two or three minutes. Using a slotted spoon, transfer the lobster pieces to a dish. Let the oil remain in the casserole.
  • To the oil in the casserole add the chicken pieces skin side down. Cook until golden brown on one side, about five minutes. Turn and cook on the second side about five minutes. Remove the pieces and add them to the lobster, leaving the oil in the casserole.
  • Add the finely chopped onion and minced garlic to the oil and cook, stirring often, until the onion is golden brown, about 10 to 15 minutes.
  • Add the parsley. Peel the baked tomatoes and chop them. There should be about one and three-quarter cups. Add this to the onion mixture. Cook, stirring occasionally, about five minutes. Add the wine and cook about five minutes.
  • Return the lobster and chicken to the casserole. Cook five minutes and add the picada. Cover and cook five minutes longer. If desired, remove the claws and break them open. Remove the meat and return it to the casserole. Discard the claw shells.

  • Add the sour cream and cook just until the cream is piping hot without boiling. Stir in the dill.
