TUNA OR SALMON CASSEROLE
This is a great one dish meal. My mom used to make this a lot for us kids, and even though I am not a fish lover, I must say I do enjoy this casserole.

SALMON OR TUNA NOODLE CASSEROLE
This casserole came about when I didn't have any tuna but I did have some leftover salmon. What the heck .. let's toss it out there and see if it's any good. It's easy to make from items you probably already have in your pantry .. no special shopping required and there isn't much clean up at all. Serve with a side salad and/or...

- 1. Preheat oven to 375 F. Coat a 2 quart baking dish with cooking spray, set aside.
- 2. In small bowl combine bread crumbs, garlic powder, dill weed and melted butter and mix until crumbly. Set aside.
- 3. In a large bowl, remaining ingredients except for the last 1/4 cup shredded cheddar cheese. Stir together until well blended. Spoon into prepared baking dish.
- 4. Spread the last 1/4 shredded cheese over the top of the casserole.
- 5. Sprinkle the bread crumb mixture evenly over the top of the casserole. Bake covered at 375 for 20 minutes.
- 6. Remove cover and return to oven for approximately 12 minutes until cheese is melted and casserole is bubbly.
- 7. Remove from oven and sit for at least 5 minutes before serving.
- 8. NOTE: Add more seasonings than listed if you like them, add less or remove them if you don't like them. This recipe is not set in stone .. however ... I recommend you try it this way first and then adjust according to your individual tastes. If you make this recipe and choose to substitute chicken or pork for the salmon or if you add chocolate or hot chili peppers or Dr Pepper you will not be happy and it is not my fault you did not follow instructions so please do not leave negative feedback .. this is a fish dish. TUNA CASSEROLE
Break out a family favorite: tuna casserole. The traditional comfort food is great for serving large groups. In our tuna casserole recipe, we cut the sauce with chicken broth, but there's enough milk to make this casserole feel indulgent.

- Preheat oven to 425 degrees. In a large pot of boiling salted water, cook pasta 2 minutes less than package instructions (it will be undercooked). Drain. In a small bowl, toss together panko, Parmesan, and 2 teaspoons oil.
- In pot, heat 2 tablespoons oil over medium-high. Add onion, season with salt and pepper, and cook until softened, 8 minutes. Add flour and whisk to coat onion with flour. Slowly whisk in broth, then milk.
- Cook, stirring constantly, until sauce comes to a boil. Reduce heat and simmer, stirring frequently, until sauce is thickened, about 8 minutes. Stir in pasta, tuna, and peas and season to taste with salt and pepper.
- Transfer tuna mixture to a 9-by-13-inch baking dish and top with panko mixture. Bake until sauce is bubbling and crust is golden, 17 to 20 minutes. Let cool 10 minutes before serving.

SEAFOOD CASSEROLE OR YUMMY TUNA CASSEROLE
This casserole is great to take to potlucks because the dish always comes back empty. You can vary the ingredients in many ways. My favorite is elbow macaroni, tuna, wine, cheddar, dill AND mustard and buttered breadcrumbs. The wine especially gives it a nice zip.

- Cook noodles, set aside.
- Combine mayonaise and milk or wine.
- Stir in soup, cheese and seasonings.
- Gently stir in cooked pasta, peas and seafood.
- Pour into casserole dish,
- Cover and bake in 350 oven for 30 minutes.
- Uncover and sprinkle with crunchy topping.
- Bake 5 minutes more.

Steps:
- Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain.
- Preheat oven to 425 degrees F (220 degrees C).
- In a large bowl, thoroughly mix noodles, onion, 1 cup cheese, peas, tuna, soup and mushrooms. Transfer to a 9x13 inch baking dish, and top with potato chip crumbs and remaining 1 cup cheese.
- Bake for 15 to 20 minutes in the preheated oven, or until cheese is bubbly.
