Tuna Tostadas image

Steps:

  • Mix tuna, mayonnaise, and salsa together in a bowl. Set aside.
  • Heat vegetable oil over medium-high heat in a frying pan. Add tortillas in batches and fry until golden and slightly crisp, 2 to 3 minutes.
  • Spread tuna mixture over tortillas evenly. Top with tomato, spinach, and onions. Sprinkle with Cheddar cheese and top with avocado slices.

Mexican Tuna Tostada image

Steps:

  • In a hot saute pan sprayed with vegetable spray, saute the red onion until golden.
  • In a large bowl mix the next 10 ingredients together and season, to taste.
  • Place each tostada in the middle of each salad plate and scoop 4 ounces into the center of each tostada. Garnish with a sprig of cilantro and a wedge of lime.

1/2 red onion, julienned
12 ounces tuna in water, drained
1 scallion, sliced
1 clove garlic, minced
1 teaspoon chopped oregano leaves
1/4 cup red bell pepper, seeded and diced
1 lime, juiced
1 cup corn kernels, toasted
1 cup romaine lettuce, sliced 1/4-inch thick
1/2 cup nonfat yogurt
1/4 cup capers
1/2 teaspoon chile de arbol, toasted and crumbled
6 tostada shells
6 sprigs fresh cilantro, washed
2 limes, cut into wedges

Tuna Stuffed Chiles image

Steps:

  • To char the chiles: Over a gas flame, char the chiles on all sides until blackened, placing them into a sealable plastic bag to sweat for about 10 minutes. Remove the chiles from the bag and, using paper towels, wipe off the charred skin from the chiles. With a paring knife, slice the chiles down the center just to reveal the inside, being careful not to fully cut them in half. With a spoon, scoop out the seeds and the vein, keeping the stem and the rest of the chile intact. Place the chiles in a 9-by-13-inch glass baking dish and set aside for stuffing.
  • To make the tuna filling: Combine the tuna, peas, corn and mayonnaise in a small bowl. Season with salt and pepper and set aside.
  • To make the pickling liquid: Cook the carrots in boiling salted water until just crisp-tender, about 3 minutes. Drain and set aside to cool.
  • Heat the oil in a large saucepan over medium heat. When the oil is hot, add the garlic and onions and cook until the onions are slightly cooked, but still crispy, 5 minutes. Add 2/3 cup water and the vinegar and bring to a simmer (see Cook's Note, below). Add the carrots, oregano and bay leaves. Simmer until the vegetables are crisp- tender and almost all of the vinegar has evaporated, 8 minutes. Let cool slightly.
  • To stuff the peppers: Stuff the peppers with the tuna mixture. Place back in the baking dish; they should fit snuggly. Pour the warm pickled mixture over the stuffed chiles and allow to cool to room temperature. Cover and chill for 2 hours or overnight. Serve cold.

8 Anaheim chiles, charred, stemmed, and seeded, left whole for stuffing
Two 6-ounce cans albacore tuna in water, drained
1 cup fresh peas (from 1 pound in the shell), or canned, or frozen and thawed
1/2 cup fresh corn kernels (from 1 ear), or canned, or frozen and thawed

Spicy Tuna Tostada image

Steps:

  • For the tostadas: Preheat the vegetable oil in a deep-fryer to 350 degrees F. Line a plate with paper towels.
  • Fry the tortillas flat until completely crisp, about 1 minute. Drain on the paper towels.
  • Cut the tuna into 1/4-inch cubes, discarding large pieces of sinew, and place in a small bowl. Dress the tuna with 2 tablespoons olive oil and some salt and pepper and mix well. Add the shallot. Drain the juice from the lime supremes and add to the radishes in a small bowl. Add the supremes to the tuna mixture and mix well. Chop half the cilantro and add to tuna mixture. Add the remaining tablespoon olive oil to the radishes and season with salt and pepper.
  • For the chipotle aioli: Place the chipotles, mayo and lime juice in a mortar and pestle and blend until smooth. Slowly add the oil and season with salt. Spoon into a bowl.
  • To compose, spread about 1 1/2 tablespoons chipotle aioli on each of the tostada rounds. Place the tuna mixture on top of the chipotle aioli. Top the tuna with the radish mixture and the remaining cilantro leaves.

2 to 3 cups vegetable oil
Eight 4-inch corn tortillas
12 to 16 ounces number 1 grade ahi tuna
3 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 shallot, finely minced
1 lime, cut into supremes (see Cook's Note), juice reserved
1 watermelon radish, peeled, or 4 regular radishes, julienned
1/2 bunch fresh cilantro, leaves picked, stems discarded
2 to 3 chipotles in adobo sauce
1/2 cup mayonnaise
Juice of 1/2 lime
1/8 cup pure olive oil
Kosher salt
