TUNA/EGG/CHICKEN SALAD DRESSING (ALL-PURPOSE)

I used to be fussy about my tuna salad dressings, since most of the time they tasted too "tinned" or "fishy." This all-purpose dressing from "Cook's Illustrated" is fabulous on all three types of sandwich fillings. Listed are the variations suggested for each filling. Recipe makes 1/4 cup (enough for one 6 ounce can tuna) but can be doubled or tripled.

Tuna/egg/chicken Salad Dressing (all-purpose) image

Steps:

  • In medium bowl using a fork, stir together all the ingredients, until completely smooth.
  • Cover and refrigerate until ready to use.
  • VARIATIONS:.
  • Barbecue (for chicken): Omit the lemon juice and add 1 tablespoon prepared barbecue sauce.
  • Basil (for chicken and egg): Add 1 tablespoon minced basil and 2 tablespoons seeded, diced tomato.
  • Buttermilk (for chicken): Substitute buttermilk for the sour cream and add 1 tablespoon minced scallions or chives; just before serving stir in 2 tablespoons fried, crumbled bacon.
  • Chipotle (for chicken and egg): Add 1/2 to 1 -1/2 teaspoon chipotle in adobo sauce.
  • Chutney (for chicken) Add 1 tablespoon mango chutney.
  • Club (for chicken and egg): Add 1 tablespoon each diced avocado and seeded, diced tomato; just before serving stir in 2 tablespoon fried, crumbled bacon.
  • Curry (for chicken) Add 1 teaspoon curry powder, pinch ground ginger, and honey to taste.

NONNA'S TUSCAN SALAD DRESSING

This very light, fresh dressing works equally well on mixed greens, spinach or romaine, or just drizzled over sliced, fresh, ripe summer tomatoes and fresh basil leaves. Quick and easy to make fresh, but stores well for up to 3 months in the refrigerator. It's a family recipe brought over from the old country by my nonna (grandma.)

Steps:

  • Place the mayonnaise, vinegar, water, lemon juice, Parmesan cheese, olive oil, garlic, oregano, basil, and black pepper into a blender. Blend for 2 minutes, then pour into a salad dressing container, and refrigerate at least 1 hour. Shake well before using.

  • Creamy Italian: Blend 1/4 cup mayonnaise, 2 tablespoons red wine vinegar, 2 tablespoon each sour cream and olive oil, 1 teaspoon Italian seasoning, 1 clove garlic, and 1/4 teaspoon kosher salt in a blender. Stir in 1 tablespoon chopped parsley.
  • Classic Vinaigrette: Whisk 2 tablespoons red wine vinegar, 2 teaspoons Dijon mustard, 1/2 teaspoon kosher salt, and pepper to taste. Gradually whisk in 1/3 cup olive oil.
  • Roasted Garlic: Slice the top off 1 head garlic; drizzle with olive oil, wrap in aluminum foil and roast at 400 degree until tender, about 35 minutes. Cool and then squeeze out the cloves. Blend the roasted garlic cloves, 2 tablespoons red wine vinegar, 2 teaspoons Dijon mustard, 3 tablespoons freshly grated Parmesan, 1/3 cup olive oil, 1/2 teaspoon kosher salt, and pepper to taste in a blender. I’m obsessed with this one. SO good! Make a double batch and use part of it for a marinade for chicken breast. It’s also amazing on roasted vegetables. I made my freezer to slow cooker Spaghetti and Meatballs and served it with a simple side salad and this dressing last night and I couldn’t get enough. Super easy, healthy, delicious, whole food meal the whole family loves.
