BEEF AND SPINACH FRITTERS
Based on a recipe from an article in Bon Appetit's May 1985 issues called "The Exciting Flavors of Tunisia" by Copeland Marks.

Steps:
- Moisten bread with water; squeeze dry. Chop finely and set aside.
- Cook spinach in heavy large skillet over high heat and stir until wilted. Cool slightly; squeeze dry. Finely chop.
- In medium bowl, mix spinach, beef, bread, onion, eggs, salt, pepper and garlic.
- Shape into 14 patties (about 1/2 cup each).
- Dredge in flour, shaking off excess.
- Heat oil in heavy large skillet over medium-high heat.
- Add patties and fry until crisp on outside and cooked through.
- Serve immediately.

CHICKEN ORECCHIETTE
Orecchiette are born from traditional Apulian cuisine, a region in southern Italy. Here they are also called "strascinate" (from the Italian verb "to drag" ), because they used to be dragged with the thumb on the rolling board to obtain their characteristic curve. If you can find Orecchiette (Barilla makes a good one) try using it...if not, use medium shells.

- Cook pasta with salt according to package directions.
- Drain and place hot pasta in mixing bowl.
- Pour olive oil and balsamic vinegar over pasta. Add tomatoes, bell peppers, scallions, and chicken; Toss well.
- Add basil, salt, pepper, feta, and Parmesan cheese.
- Toss well and serve immediately.

BORGHOL BIL ALLOUCHE
From "Tunisia: Mediterranean Cuisine" published by Konemann. A delicious casserole-type dish. You can substitute the lamb with another meat of your choice.

Steps:
- Cut the lamb into 1/2 inch cubes.
- Place into large pot. Add olive oil and seasonings. Mix until spices are well distributed.
- Add about 3 cups water, onion slices, tomato paste, and garbanzo beans. Bring to a boil.
- When water begins to boil, add bulgur wheat, stir, cover, and cook 35 minutes. Check toward the end and add water if necessary.
- If using frozen peas, add to pot and continue cooking until peas are defrosted.
- If using fresh peas, add and remove from heat.
- Add diced chiles.
- Transfer to an oven-safe casserole dish and place under the broiler for 10 minutes.
- Serve warm. This can be a meal in itself, or you can serve with some vegetables.

Lablabi is a popular breakfast stew made with chickpeas, broth, tomatoes, and various toppings such as capers, cumin, harissa, coddled eggs. Lablabi is a favorite winter morning breakfast for stevedores in Tunis. Throughout the city it is a morning offering in the small hole-in-the-wall cook shops. The actual soup is very simple and it's depth of flavor derives from the garnishes you decide to use. As a tourist you will come home wanting lablabi in the morning; that's how seductive it is. Steps:
- Place the chickpeas in a saucepan and cover with water.
- Boil until soft, about 30 minutes, then stir in the harissa, garlic, cumin, and salt.
- Stir well, reduce the heat to medium, and cook for 10 minutes.
- Stir in the lemon juice and olive oil.
- Serve with more lemon juice, salt, and ground cumin to taste.
- Serve with any combination and any amount of optional garnishes, including more harissa and olive oil.

- Take the seeds out of the tomatoes and green peppers, and dice them so they are all the same size. Cut the onions into quarters, then into very thin slices. Salt it all.
- Cut the mint into tiny pieces, add this to the mix, then add the lemon juice. Mix it all up.
- Put this mix in the middle of a large serving plate or platter. Garnish the plate with lettuce leaves, arranged nicely around the edge of the plate. Garnish also with hard boiled egg, and radish. Slice the tomato at the end of the recipe, and arrange the slices around the edge of the plate, or quarter them, and similarly arrange them.
- Arrange the tuna on top of the vegetables in the center of the plate. Add the feta and scatter the olives around the plate. Drizzle the whole dish with olive oil.
- This should be eaten at room temperature.

TUNISIAN SHAKSHUKA WITH SHRIMP
The Arabic word shakshuka loosely translates to "all mixed up" in English, and rightly so, as the dish usually includes a colorful array of ingredients that are traditionally served in a cast-iron skillet. Made with eggs poached in a bright, peppery tomato sauce, it is a staple of Tunisian home cooking. Shrimp shakshuka is popular on the Mediterranean Coast, where shrimp are fresh and plentiful, but you could substitute merguez or skip the protein entirely for a vegetarian option. It is easy to make and can be eaten for breakfast, lunch or dinner.

- Heat 1 tablespoon oil in a large cast-iron skillet or heavy pan over medium. Add 1 teaspoon garlic and sauté until tender, about 1 minute. Add shrimp to pan, season with salt and pepper and sauté until shrimp turns pink all over, 4 to 5 minutes, then set aside.
- In the same pan, add the remaining 1 tablespoon olive oil, the onion and the rest of the garlic. Season with salt and pepper. Cook the onion and garlic, stirring frequently, until onion becomes translucent, about 3 minutes. Add the tomatoes, bell pepper, tomato paste and harissa to the pan and sauté for 5 minutes.
- Add the ras el hanout, caraway, coriander and 1/2 cup warm water and stir to thoroughly combine. Reduce the heat to low, cover and cook, stirring occasionally, for 5 minutes.
- Set the shrimp on top of the sauce, spacing evenly apart, and using a spoon, make shallow craters in the tomato mixture for the eggs. Crack the eggs into the craters, cover, and let simmer 6 to 8 minutes, or until eggs are cooked to your liking. Serve with warm baguette, and olives, pickled peppers and cornichons, if desired.

- Brown sausage in a nonstick skillet over medium-high heat, breaking up the large chunks with a wooden spoon. Add the mushrooms and salt to taste, and continue cooking until sausage is cooked through (about 5 minutes). Transfer the meat mixture to a bowl to keep warm, then wipe out the skillet.
- In a bowl, stir together all the tomato sauce ingredients. Heat the wiped skillet on medium-low. Arrange one tortilla in the skillet, then spread 2 or 3 tbs of the tomato sauce over it. Top with 1/2 cup mozzarella cheese, half of the sausage mixture, and half of the pepperoni slices. Arrange 1/4 cup of the baby spinach leaves over the top and sprinkle with half of the Parmesan cheese. Once mozzarella is melted, carefully transfer the tortilla to a cutting board or plate and roll (it's okay if the tortilla cracks, because the cheese will hold it together). Allow the wrap to stand for 1 minute so all the ingredients will heat up. Repeat with the other half of the ingredients. Serve with the remaining tomato sauce for dipping.

TUNISIAN HSOU FROM TOZEUR
A hearty soup/stew from the desert region of Tunisia. Adapted from "Tunisia: Mediterranean Cuisine" published by Konemann. Note: there are a number of good recipes for harissa on Food.com, or you can just purchase it if your local store carries it. Also note: I listed this as "Libyan" in the recipe sifter because there's not an option for "Tunisian" or a generic "North African". I figured since Libya and Tunisia are neighbors, it was the best choice.

Steps:
- Chop the onion in a food processor until it is finely chopped.
- Chop the celery ribs and garlic in a food processor until they are finely chopped.
- In a thick-bottomed pot, saute the onion in the olive oil. Cook until onions are soft and sweet.
- Stir in tomato paste, harissa, paprika, caraway, and coriander. Season with salt and pepper and stir to mix.
- Add celery and garlic and stir to mix.
- Add 4 cups of water. Stir well. Bring to the boil and simmer 20 minutes.
- Add semolina and stir. Simmer another 10 minutes.
- Scoop out the flesh from the lemon. Chop coarsely and add to soup. Simmer another 5 minutes.
