SPICY TURKEY STIR FRY WITH NOODLES

I created this ground turkey stir-fry recipe when I began my journey to get fit. Healthy eating always sounds so bland and boring, so I wanted to bring life to the world of healthy eating. I think I did it with this spicy dish. -Jermell Clark, Desert Hot Springs, California

Spicy Turkey Stir Fry with Noodles image

Steps:

  • Cook noodles according to package directions. Meanwhile, in a large skillet, cook turkey, onion, cabbage and kale over medium-high heat until turkey is no longer pink and vegetables are tender 8-10 minutes, breaking up turkey into crumbles., Drain noodles; add to skillet. Stir in parsley, coconut oil, pepper and salt. Serve with green onions, jalapeno, chili sauce and if desired, peanut sauce.

2 ounces thick rice noodles
1/2 pound lean ground turkey
1 small onion, chopped
1/2 cup shredded red cabbage
1/2 cup chopped fresh kale
1/4 cup packed fresh parsley sprigs, chopped
1 teaspoon coconut or olive oil
1/2 teaspoon pepper
1/4 teaspoon salt
3 green onions, thinly sliced
1 jalapeno pepper, sliced
2 teaspoons Sriracha chili sauce
Thai peanut sauce, optional

TURKEY AND NOODLES WITH PEANUT SAUCE

This recipe is from my new favorite web site, Epicurious. I have made it many times and have not deviated from their original recipe except for deleting the celery and using snow or snap peas instead. This is a great recipe to use left over turkey or chicken, I have used a store bought cooked chicken.

Turkey and Noodles With Peanut Sauce image

Steps:

  • Cook noodles in a 6-8 quart pot of boiling salted until tneder about 12 minutes.
  • Reserve 1 cup cooking water, then rinse noodles in a colander under cold water.
  • Drain well.
  • While noodles are cooking, cook garlic and red pepper flakes in vegetable oil in small heavy sauce pan over moderate heat, stir util galice is golden.
  • Whisk in chicken broth, peanut butter, soy sauce, sugar and ginger.
  • Simmer while whisking for 2 minutes.
  • Remove from heat and whisk in lemon juice.
  • Toss together turkey, celery, scallions, noodles and sauce.
  • If necessary add some reserved cooking water to thin the sauce.
  • Serve immediately.

  • Cook pasta in a large pot of boiling salted water according to package directions. Drain in a colander and return to pot. Cover to keep warm.
  • Meanwhile, mix the peanut butter, soy sauce, garlic, lemon juice and curry powder together in a medium bowl until smooth. Add salt and pepper to taste and adjust seasoning as necessary. Set aside.
  • Add oil to a large nonstick skillet over medium heat and swirl until hot. Add peppers and cook, stirring frequently, until crisp-tender (about 3 minutes.) Add Turkey and toss with peppers until heated through.
  • Reduce heat to medium low and add noodles and peanut sauce. Toss well until everything is well coated. add green onions and toss until combined. Divide evenly to four serving bowls. Sprinkle with chopped peanuts and serve immediately.
