Steps:
- Bring water and margarine to a boil in a saucepan; stir in stuffing mix. Cover and remove from heat. Let stand until stuffing is softened, about 5 minutes. Fluff with a fork.
- Spoon about 1/2 cup stuffing over each slice of turkey. Roll turkey around stuffing and arrange rolls in a microwave-safe dish, seam-side down. Pour gravy over rolls.
- Heat in a microwave on high until gravy is bubbly, about 5 minutes.

STUFFED TURKEY ROLL
When a friend gave me some ground turkey to use up, I looked for an inventive way to prepare it. I found this recipe while scouring through my collection. - In a large bowl, combine the egg, oats, salt and pepper. Crumble turkey over mixture and mix well. Pat into a 12x9-in. rectangle on a piece of heavy-duty foil; set aside., In a large saucepan, saute onion and celery in butter until tender. Remove from the heat. Stir in water, sage and thyme. Add stuffing; stir until well coated. Spoon over turkey to within 1 in. of edges. Roll up, jelly-roll style, starting with a short side and peeling away foil while rolling., Place loaf, seam side down, in a greased 9x5-in. loaf pan. Place bacon strips over top. Bake, uncovered, at 325° for 60-70 minutes or until meat is no longer pink and a thermometer reads 165°.

- Heat oil in a pan on the stovetop until it reaches 375 degrees F (190 degrees C).
- Toss turkey and 1/2 cup gravy in a bowl until well combined.
- Lay an egg roll wrapper on a plate or a clean cutting board with one of the corners pointing up, so it is positioned like a diamond. Pour some water into a small bowl next to the plate. Layer 2 tablespoons mashed potatoes, 2 tablespoons of the turkey-gravy mixture, 2 tablespoons stuffing, and 1/2 tablespoon of cranberry sauce in a vertical line in the center of the wrapper.
- Dip your fingertips in the bowl of water and swipe some water around the edges of the egg roll wrapper. Fold the top and bottom corners of the egg roll wrapper over the filling. Next, fold in the left corner, then roll from left to right until the egg roll is completely wrapped. Wet your fingers with additional water and trace the parts of the egg roll wrapper that connect to each other and pinch lightly to seal. Repeat with the remaining wrappers and filling.
- Fry egg rolls in batches in the hot oil, turning often, until golden brown and heated through, 3 to 4 minutes. Transfer to a paper towel-lined plate to drain and cool.

HMONG EGG ROLL STUFFING
One Thanksgiving, the pastry chef Diane Yang's parents, Hmong refugees from Laos, found that they had filling left over from making egg rolls, and her mother came up with the idea of using it to stuff the turkey. It's lighter than traditional bread stuffing, and yields relatively small servings, but it's a delicious addition to the feast. It is not intended to be baked alongside the turkey. If you'd like, double this recipe and use the remainder to fill egg rolls. Purchase egg roll wrappers (often found in the freezer section at the market), thaw them, and roll them with stuffing. Deep fry in vegetable oil until golden brown, and serve hot.

- In a large skillet, cook turkey over medium heat until no longer pink; drain. Stir in the coleslaw mix, sesame seeds, soy sauce, Worcestershire sauce, ginger and seasoned salt. Cook for 3-4 minutes or until cabbage is crisp-tender., Place 1/4 cup of turkey mixture in the center of one egg roll wrapper. (Keep remaining wrappers covered with a damp paper towel until ready to use.) Fold bottom corner over filling. Fold sides toward center over filling. Steps:
- Preheat a deep-fryer to 375 degrees F.
- In a large bowl add the turkey and the stuffing and mix to combine. In a small bowl, beat the egg with water to form an egg wash. Layout the egg roll wrappers and spoon 2 tablespoons of the turkey mixture onto each wrapper. Brush the edges of the wrappers with egg wash. Roll tightly, being sure to bring the sides together so the egg roll is tight. Before the final wrap, use some egg wash to seal. Set the finished egg rolls on a platter until ready to fry.
- Fry the egg rolls, in batches, until golden brown and crispy, about 1 to 2 minutes. Remove the egg rolls to paper towels to drain. Allow to cool and arrange on a serving platter. Serve with warm Gravy and Cranberry Dipping Sauce.
- Jazzed Up Stuffing:
- About 1 cup chicken stock
- 1 box prepared stuffing
- 1 tablespoon freshly chopped thyme leaves
- 1 tablespoon freshly chopped rosemary leaves
- 1 tablespoon freshly chopped sage leaves
- In a large saucepan add the chicken stock and bring to a simmer over low heat. Remove from the heat and stir in the stuffing and the fresh herbs. Mix well.
- Dip in gravy or cranberry sauce.

TURKEY AND EGGS
Steps:
- Saute the onions in some olive oil in a frying pan over medium heat until soft. Add a pinch of salt and 4 turns of the pepper mill. Saute the onions until caramelized. Add in the sliced turkey breast and pan fry with the onions for a few minutes.
- Whip all the eggs together and pour into the frying pan. Scramble. Top with a handful of Pecorino Romano cheese.
TURKEY AND STUFFING EGG ROLLS
I saw Aaron McCargo do these on his Thanksgiving Cocktail Party episode on the Food Network, and decided to put some of my leftovers to the test. The version here is modified from what he did, as I used my versions of the stuffing, gravy and cranberry dipping sauce. Definitely tested and approved!

- 1. Mix turkey and stuffing together. In a small bowl, beat the egg and water together for egg wash.
- 2. Lay out your egg roll wrappers, spoon 2 tbs of the turkey mixture onto each wrapper. You may add a little cranberry sauce if you wish. (Don't overload the egg rolls!)
- 3. Brush the edges of the wrappers with egg wash. Roll them up, starting at one corner and bringing in the sides as you roll. Roll tightly, use the egg wash to seal.
- 4. Fry the egg rolls in batches in hot oil (375), 1-2 minute until light golden brown. Remove from fryer and drain on paper towels. (I fried these the first time, but this year I am going to try spraying with cooking spray and baking in the oven @ 350.)
- 5. Reheat your (leftover) gravy to use as a dipping sauce. Add a little orange or apple juice to your (homemade or canned) cranberry sauce and warm this to use as a dipping sauce.

Turn the heat down to low and stir in the flour and pepper, making a roux. Add in the herbs, chicken stock, and salt. Continue simmering over low heat until the gravy thickens, stirring occasionally. Transfer to a small dish for dipping.
- To a medium saucepan, over low heat, add the cranberries, strawberries, sugar, and orange juice. Bring to a simmer, cooking until the cranberries pop, about 6-8 minutes. Stir and simmer for an additional 4-5 minutes. Remove from the heat and use a masher until the mixture is smooth. Transfer to a small dish for dipping.
