BACON-WRAPPED VEGGIE BUNDLES

Steps:

  • Heat oven to 425°F.
  • Combine vegetables in large bowl. Whisk next 4 ingredients until blended. Add to vegetables; mix lightly.
  • Cover rimmed baking sheet with foil; spray with cooking spray. Place bacon slices in single layer on prepared baking sheet; top evenly with beans and carrots, placing vegetable pieces crosswise along length of bacon slices. Roll up, starting at one short end of each bacon slice. Place, seam sides down, on baking sheet.
  • Bake 30 min. or until bacon is crisp, turning after 15 min.

Steps:

  • Add 2 cups water to pan. Roast, uncovered, until bacon is lightly browned, 25-30 minutes. Reduce oven setting to 350°. Bake until a thermometer inserted in thickest part of thigh reads 170°-175°, about 90 minutes longer. Cover loosely with foil if bacon browns too quickly., Remove from oven. Cover and let stand for 15 minutes before carving.

  • Preheat oven to 350 degrees F (175 degrees C).
  • Sprinkle sage and garlic powder over the entire turkey. Wrap turkey completely with bacon. Place turkey on a roasting rack and place roasting rack in a large baking dish. Pour water into the base of the dish.
  • Bake turkey in the preheated oven, basting every 45 minutes with juices in baking dish, until no longer pink at the bone and the juices run clear, 3 1/2 to 4 hours. An instant-read thermometer inserted into the thickest part of the thigh should read 165 degrees F (74 degrees C).

TURKEY BACON WRAPPED GREEN BEAN BUNDLES image

Steps:

  • 1. Steam or boil green beans until al dente, not mushy. Put into a ice bath to stop the cooking.
  • 2. Make 4 bundles green beans, ( about 10 beans to a bundle). Sprinkle with course sea salt and ground pepper. Roll each bundle in 2 slices turkey bacon. The ends of the beans should be hanging out.
  • 3. Heat a non stick skillet over medium high heat, Add butter and swirl to coat. Place bundles in skillet seam side down. Cook on all sides until browned.
  • 4. NOTE: THE TURKEY BACON SHOULD BE PAPER THIN.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a casserole dish.
  • Set out the bacon, green beans and casserole dish in a little assembly line. Lay out a half strip of bacon. place a small bunch of green beans (6 or 7) onto the strip of bacon and roll up into a bundle. Place the bundle into the casserole dish, seam side down. Repeat with remaining bacon strips and green beans. You can pack these pretty tight in the pan, just know that if the bacon is touching another bundle they take some prying to get apart. Sprinkle with the brown sugar and salt and pepper.
  • Bake in the preheated oven until browned and heated through, about 20 minutes.
