My son claims this is the best recipe I have come up with for sloppy joes. Serve on hamburger buns and top with cheese.

Steps:

  • Heat oil in a large skillet over medium heat; cook and stir onion in hot oil until translucent, 5 to 7 minutes. Break ground turkey into small pieces and add to skillet; cook and stir, breaking turkey further into smaller pieces, until completely browned, 7 to 10 minutes.
  • Stir ketchup, vinegar, Worcestershire sauce, Dijon mustard, brown sugar, and chili powder into the turkey; cook at a simmer until hot and thick, about 10 minutes.

Steps:

  • Melt butter in a heavy skillet over medium heat. Add onion; cook and stir until onion starts to brown, about 5 minutes. Season with salt and black.
  • Mix ground turkey and 1/2 cup cold water into onions. Cook and stir, breaking up the meat, until it begins to brown, about 2 minutes. Add ketchup, brown sugar, cayenne pepper, salt, and black pepper. Cook and stir until liquid is reduced, about 5 minutes. Stir in Worcestershire sauce and cocoa powder. Cook, stirring frequently and adding up to 1 cup water if needed, until meat is cooked through and liquid is reduced and thick, 20 to 30 minutes.
  • Preheat the oven's broiler and set the oven rack about 6 inches from the heat source. Toast hamburger buns until golden, 2 to 3 minutes.
  • Remove turkey mixture from the heat and mix in green onions and Cheddar cheese. Serve on toasted hamburger buns.

Sloppy Jerky Turkey Joes image

Steps:

  • Heat the oil in a large skillet over medium-high heat. When the oil ripples and is hot, add the meat and brown. Add the onions, chile, bell pepper, garlic and salt and pepper, to taste. Stir in the paprika, ginger, allspice, cinnamon, nutmeg, thyme and cilantro. Stir occasionally for 8 to 10 minutes.
  • In a small bowl combine the vinegar, sugar, Worcestershire sauce, lime juice, and tomato sauce. Stir the sauce into the turkey mixture. Simmer for a few minutes, then serve on rolls with a garnish of scallions, chopped pickles, and chopped cilantro.

Steps:

  • Pulse the mushrooms in a food processor until finely chopped.
  • Heat the olive oil in a large skillet over medium-high heat until shimmering. Add the onion, bell pepper and 1/2 teaspoon each salt and pepper and cook, stirring occasionally, until slightly softened, about 4 minutes. Add the mushrooms and an additional 1/2 teaspoon salt and cook for 3 minutes. Add the ground turkey, 1 teaspoon salt and some pepper and cook, stirring and breaking up any clumps with a wooden spoon, until the mushrooms have released their liquid and the meat is browned, about 8 minutes.   • PREP VEGGIES: Peel an onion and grate it on the large holes of a cheese grater. Mince the garlic, finely chop (or grate on the large holes) a carrot, finely chop the red pepper, and finely chop the mushrooms. ALTERNATIVELY, add a coarsely chopped carrot, coarsely chopped red pepper, and garlic to a food processor and pulse into diced pieces. Add the mushrooms separately and pulse into diced pieces.
  • COOK VEGGIES: Add 1 tablespoon olive oil to a large cast iron skillet and place over medium high heat. Add in the onion, garlic, carrot, and bell pepper. Sauté for 5-7 minutes or until liquid from the veggies has evaporated. Add in the mushrooms and saute for another 2-3 minutes or until all veggies are mostly tender. Press veggies to the edges of the skillet and add 1 pound ground turkey in the center of the pan. Crumble the meat into small pieces and cook until no longer pink (but not cooked through all the way), about 5-8 minutes. As you crumble the meat, incorporate the veggies into the meat. Season with salt and pepper to taste.
  • SAUCE: Whisk this sauce separately in a different bowl or just add it right into the skillet. Add the 1/2 cup ketchup, 1 (8 ounce) can tomato sauce, 1 tablespoon Worcestershire sauce, 1 tablespoon red wine vinegar, 1 tablespoon brown sugar (Note 1), 1 teaspoon yellow mustard, 2 teaspoons beef bouillon powder, and 1/4 cup BBQ sauce. Stir well and then simmer the meat until fully cooked through and sauce has thickened, about another 3-5 minutes.
  • FINISH: Remove the skillet from the heat. If desired, add some freshly grated cheese on top of the meat and let it stand (covered with a lid) for 2-3 minutes or until melted. Spoon the mixture on top of toasted buns (Note 2) and enjoy immediately.
