TURKEY OR CHICKEN CORDON BLUE--WEIGHT WATCHERS

This is one that my daughter makes that is delicious. It came from an older Weight Watchers Cookbook. It has only 4 points per serving. Even you non-WW friends will like it. You may use chicken breasts that you pound out into a cutlet. I prefer the chicken to the turkey.

Turkey or Chicken Cordon Blue--Weight Watchers image

Steps:

  • Preheat oven to 350 degrees; spray an 8" square baking dish with nonstick cooking spray.
  • In a gallon-size sealable plastic bag, combine the flour, pepper, and poultry seasoning; add turkey and shake to coat.
  • In a large nonstick skillet, heat the oil; add the turkey and cook till lightly browned, about 2 minutes on each side.
  • Transfer to the baking dish.
  • In the same skillet, combine mushrooms, onion, and ham; cook stirring constantly, till osftened, about 5 minutes.
  • Spoon evenly over turkey; top each cutlet with a slice of cheese.
  • Bake till turkey is cooked through, about 15 minutes.
  • Serve garnished with pimiento strips.
  • 186 calories, 6 g fat, 1 g fiber.

1 tablespoon flour
1/4 teaspoon fresh ground black pepper
1/4 teaspoon poultry seasoning
4 (3 ounce) skinless boneless turkey or 4 (3 ounce) chicken breasts, cutlets
1 tablespoon olive oil

Steps:

  • Preheat oven to 400°F Coat a baking sheet with olive oil cooking spray.
  • Place chicken breasts between two pieces of plastic wrap and pound to 1/4-inch thickness; remove plastic wrap. Arrange 1 slice of ham and 1 slice of cheese on each chicken breast.
  • Starting from shorter end of chicken, roll up breast into a tight pinwheel. Tuck in ends. Secure with toothpicks.
  • Place flour, honey mustard and bread crumbs in 3 separate shallow bowls. Add chicken to flour; turn to coat. Transfer chicken to honey mustard; turn to coat. Place chicken in bread crumbs; turn to coat.
  • Transfer chicken to prepared baking sheet and coat with cooking spray. Bake until chicken is golden brown and cooked through, about 40 minutes. Remove toothpicks and serve.

  • In a small bowl, whisk egg whites with the water. In another small bowl, place the remaining 1⁄4 cup bread crumbs.
  • Cut a pocket into the side of each chicken breast about 2 1⁄2-inches long. Inside each slit, place one-quarter of filling. Lightly press pocket closed. Wrap 1 half slice of cheese, then one slice of ham around each chicken breast, making sure the ham covers the cheese; secure with a toothpick. Dip the chicken, one piece at a time, into the egg white mixture, then into the bread crumbs. Transfer to the baking pan. Lightly spray the chicken with nonstick spray. Bake until the chicken is cooked through, about 25 minutes. Remove the toothpicks before serving.
