Steps:

  • Preheat oven to 350 degrees F.
  • Melt butter in saucepan and cook chopped onion until tender. Stir in celery and carrots and cook for 2 minutes. Stir in flour and cook for 2 minutes. Add chicken stock and bring to a simmer. Add potatoes and simmer until tender. Stir in turkey, parsley and peas. Pour mixture into casserole. Top with pie crust and brush with egg. Bake for 30 minutes until crust is golden.

4 cups chicken or turkey stock

Steps:

  • Gather ingredients and heat oven to 425°F. Lightly spray 14-inch pizza pan with cooking spray.
  • Unroll pizza crust; use hands to gently pull it to fit pan. Bake about 8 minutes or until lightly browned; set aside.
  • Meanwhile, in 10-inch skillet, melt 1/2 tablespoon of the butter over medium heat. Add onion, celery and carrots; cook about 5 minutes or until softened.
  • Remove vegetables from skillet; set aside. Add remaining butter to skillet; stir in flour. Add chicken broth and milk a little at a time, while constantly stirring until all is incorporated and mixture is smooth and thick. Add 1/2 cup of the cheese, the salt, pepper and Italian seasoning. Stir about 1 minute or until cheese is melted.
  • Add cooked vegetables and frozen peas to cheese sauce; stir until combined.
  • Spoon sauce over partially baked crust. Top with sliced turkey breast and remaining cheese.
  • Bake 5 to 7 minutes or until cheese is melted and crust is golden brown. Serve immediately.

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Roll out bottom pie crust and place in the 10 inch pie pan and set aside.
  • Place 2 tablespoons of the butter in a large skillet. Add the onion, celery, carrots, parsley, oregano, salt and pepper. Cook and stir until the vegetables are soft. Stir in the bouillon and water. Bring mixture to a boil. Stir in the potatoes, and cook until tender but still firm.
  • In a medium saucepan, melt the remaining 2 tablespoons butter. Stir in the turkey and flour. Add the milk, and heat through. Stir the turkey mixture into the vegetable mixture, and cook until thickened. Pour mixture into the unbaked pie shell. Roll out the top crust, and place on top of filling. Flute edges, and make 4 slits in the top crust to let out steam.
  • Bake in the preheated oven for 15 minutes. Reduce oven temperature to 350 degrees F (175 degrees C) and continue baking for 20 minutes, or until crust is golden brown.

  • In a Dutch oven, saute onions in oil until tender. Add garlic; cook 2 minutes longer. In a small bowl, whisk flour and broth until smooth; gradually stir into onion mixture. Stir in tomatoes. In a sauce pan, add the broth/stock, potato slices, and carrot slices. Bring to a boil and then lower the heat and cook until softened, about 15 minutes. Transfer the potatoes and carrots from the stock into a bowl. Add the peas to the stock and cook for a couple of minutes. Drain peas and add to the bowl with potatoes and carrots. In a small skillet, add the olive oil and onions and cook over medium heat until onions are soft and translucent. Remove from heat and set aside. Thinly slice the mozzarella and set aside.
  • In a small saucepan over medium heat, melt the butter and then add the flour. Stir and cook for 1 to 2 minutes. Whisk in the milk a little at a time. Continue cooking, stirring constantly, until mixture comes to a boil and thickens. Remove from heat. Add salt and pepper to taste.
  • Preheat the oven to 400 degrees F. Lightly grease a baking sheet. Place the puff pastry on the baking sheet and roll it out to about a 10 X 15-inch rectangle.
