GOAT CHEESE AND SPINACH TURKEY BURGERS
This fast and easy recipe is perfect to make after a long day at work. The goat cheese adds a creamy flavor to sometimes bland turkey burgers. Served with a side salad, it makes a perfectly delicious meal.

Steps:
- Preheat the oven broiler.
- In a medium bowl, mix ground turkey, spinach, and goat cheese. Form the mixture into 4 patties.
- Arrange patties on a broiler pan, and place in the center of the preheated oven 15 minutes, or until done.

A completely different take for the grill. Try seasoned feta for even more Greek Isle flavor. Be sure to squeeze as much water as possible from the spinach so the burgers will stick together well. You might also consider shaping these into half-circles and serving in split pitas. Yum!

These are a big hit in the summertime when everyone is tired of the same old hamburgers and hot dogs. Serve with or without buns and your favorite condiments. I like to serve these with lettuce, tomato, and Tzatziki sauce (you can find recipes for that on this site as well).

- Preheat an outdoor grill for medium-high heat and lightly oil grate.

RACHAEL RAY'S SPANAKOPITA BURGERS
I'm always looking for a good turkey/chicken burger and this is WONDERFUL. Juicy, full of flavor and not a bland thing about it. Serve with a yogurt cucumber sauce if you like. Works very well on the George Foreman.

Steps:
- Heat a large nonstick skillet over medium heat.
- To one side, add a little extra-virgin olive oil and a tablespoon of butter.
- When butter melts, add the chopped garlic and chopped red onion and cook 5 minutes. Transfer the onions and garlic to a bowl to cool.
- Return pan to heat.
- Squeeze all the water out of the thawed spinach.
- Separate the spinach as you add it to the bowl with cool onions, garlic and season with 1 teaspoon of oregano.
- Add in feta crumbles then chicken or turkey, grill seasoning and a drizzle of extra-virgin olive oil.
- Mix and form into 4 patties, 1-inch thick.
- Raise heat on pan to medium-high.
- Add patties and cook 6 minutes on each side.
TURKEY/CHICKEN-SPINACH BURGERS
I don't really measure a whole lot, I just eyeball - so feel free to make adjustments as desired.

Steps:
- Take frozen spinach out of the package and onto a clean towel or paper towel, then defrost and squeeze out as much of the liquid as possible.
- Place thawed ground turkey in large mixing bowl, and mix in spinach.
- Divide meat into 6 round patties and flatten into a burger shape.
- A griddle works best, but feel free to grill or use a skillet. If you use a griddle or skillet, spray with non-stick cooking spray or olive oil spray (your preference).
- Sprinkle Watkins Bacon-Onion powder or spice of your choice (pepper and salt work fine) on top side of burger before flipping.
- Cook on each side until slightly browned and cooked all the way through (maybe 8-15 minutes depending on cooking method).
- Place on buns and serve. I don't use any condiments on mine, but feel free to add lettuce, tomatoes, ketchup, mustard, etc. as desired.
TURKEY BURGER WITH SPINACH AND MUSHROOMS
If you plan on putting these on a grill, you should place them in the freezer for about an hour or so. They are very soft. I've also made these into little meatball appetizers and served my cucumber yogurt dressing (below) as a dip - Delicious!

- Microwave spinach with a little water to soften, drain well and cool.
- In a large bowl, mix ingredients from spinach to ground pepper. Add ground turkey, mix lightly with your hands - but don't over mix.
- Cover and place bowl into refrigerator for about an hour, to blend flavors.
- Remove and make turkey patties.
- Heat a griddle or large skillet on medium heat.
- Spray with a cooking spray.
- Place turkey patties on griddle and cook for 3-5 minutes on each side.
- If turkey patties begin to stick, add a little more cooking spray. Be careful not to overcook.
- When patties are done - serve them on your favorite wheat bun with lettuce, tomato and cucumber yogurt dressing (below).
- Enjoy!
- Cucumber and yogurt dressing. - 2/3 cup nonfat plain yogurt (I prefer a Greek yogurt), 1/2 cup English cucumber - peeled and chopped, 2 tablespoons sliced green onion, 2 tablespoons 1% milk, 2 tablespoons fresh lime juice, 1 tablespoons light mayonnaise, 3/4 teaspoons kosher salt, 2 lg. cloves minced garlic, Pinch sugar (splenda). Combine all ingredients and chill 24 hours for flavors to blend.
