TURKEY TACO FILLING
Weight Watchers...but so darn good! Serve this taco filling rolled in tortillas, wrapped in large lettuce leaves or spooned over baked potatoes. It's the beginning of many different Mexican-inspired meals.

- In a small bowl, mix together chili powder, cumin, paprika, salt, garlic powder, onion powder, oregano and cayenne; set aside.

- Place turkey in a large nonstick skillet over medium heat; cook, breaking apart meat with back of spoon, until no longer pink, about 4 to 5 minutes.

- Sprinkle turkey with reserved seasoning mix and add water; reduce heat and simmer, stirring occasionally, until most of liquid is absorbed, about 10 to 15 minutes. Stir in sugar and vinegar; simmer another 2 to 3 minutes. Yields about 1/2 cup per serving.

This recipe has fewer calories because of the ground turkey and amazing flavor! It is a little spicy, but our family enjoys it this way. Because it has so much flavor, you cannot even tell it's not ground beef. It tastes great as a topping on baked potatoes as well as tacos. Enjoy!

Steps:
- Microwave onions, chili powder, oil, garlic, chipotles, and oregano in bowl, stirring occasionally, until onions are softened, about 5 minutes; transfer to slow cooker.
- Stir tomato sauce and sugar into slow cooker.
- Mash bread and milk into paste in large bowl using fork.
- Mix in ground turkey, ½ tsp salt and ¼ tsp pepper using hands.
- Stir turkey mixture into slow cooker, breaking up any large pieces (do not overmix).
- Cover and cook until turkey is tender, 4-6 hours on LOW.
- Let turkey filling settle for 5 minutes, then remove fat from surface using large spoon.
- Break up any remaining large pieces of turkey with spoon.
- Stir in cilantro, scallions, and lime juice and season with salt and pepper to taste before serving.
- Use as filling for tacos, burritos, etc.

Felt like Mexican, but not really...so I came up with this! Servings are hearty. Serve in taco shells or tortillas with mozzarella, parmesan, and ricotta cheeses, olives, and more fresh veggies! I use extra lean turkey to keep the fat lower. Be sure to use a large skillet, or even a stock pot, as this makes a lot.

- In a bowl, mix diced tomatoes and Italian dressing mix. Set aside.
- In a large non-stick skillet heat 1/2 tsp of oil over medium heat. Add ground turkey, Italian seasoning, salt and pepper to taste, and cook through until no longer pink. Remove to a bowl.
- Heat remaining oil over medium-high heat. Add garlic, onions, and peppers. Cook about 5 minutes.
- Add zucchini and mushrooms. Cook for about 7 minutes, until zucchini is softened.

- In a large non-stick skillet heat 1/2 tsp of oil over medium heat. Add ground turkey, salt and pepper to taste, and cook through until no longer pink. Remove to a bowl.
- Heat remaining oil over medium-high heat. Add garlic, onions, peppers, and zucchini. Cook until vegetables begin to soften, about 10 minutes.
- Mix in corn and cook another 5 minutes.
- Add 2 tablespoons of seasoning and mix. Add ground turkey, water, and remaining seasoning. Mix well.
