Tuscan Sausage Vegetable Soup image

Steps:

  • Cook pasta in boiling water for 9-11 minutes. Drain.
  • In a large pot, brown sausage.
  • Stir in zucchini, squash and onion; cook and stir until tender.
  • Add all remaining ingredients, except pasta.
  • Bring to a boil. Reduce heat; cover and simmer 15 minutes.
  • Stir in pasta.

1/2 lb Italian sausage, sliced
1 small zucchini, sliced
1 small summer squash, sliced
1 small onion, chopped
8 ounces tubettini pasta or 8 ounces orzo pasta
3 cups water
1 (26 ounce) jar pasta sauce
1 (16 ounce) garbanzo beans, rinsed and drained
1 beef bouillon cube

  • Heat oil in a large stockpot over medium heat until the oil shimmers; cook and stir onion, garlic, red pepper flakes, and black pepper until onion is translucent, 10 to 15 minutes.
  • Mix sausage, basil, and paprika together in a bowl.
  • Stir sausage mixture into onion mixture; cook and stir until sausage is browned and fully cooked, 5 to 10 minutes. Add chicken broth, kale, cannellini beans, and potatoes to sausage-onion mixture; lower heat to medium low. Cover stockpot and simmer until potatoes are tender, 15 to 20 minutes.

Steps:

  • Heat 5-quart Dutch oven over medium-high heat. Add sausage, onions and carrot; cook 8 to 10 minutes, stirring occasionally to break up sausage, until sausage is no longer pink. Stir in garlic and pepper flakes; cook 1 to 2 minutes or until garlic is fragrant.

Steps:

  • Use bulk sausage or remove the casings from the sausage and discard.
  • Brown the sausage in a heavy Dutch oven or large saucepan, mashing it with the back of a spoon until the meat is no longer pink and has rendered most of its fat.
  • Spoon out most of the fat from the cooked sausage and discard.
  • Add the onions and garlic and cook, stirring,until soft but not browned.
  • Add carrots, zucchini, pepper, wine, chicken broth, tomatoes, basil, and oregano and bring to a boil.
  • When the soup in boiling, add the orzo and cook for 20 minutes.
  • Season to taste with salt and pepper.
  • Serve in heavy soup bowls.

  • 1. Heat olive oil and butter in large soup pot or stockpot. Add sausage meat and sauté over high heat just to brown.
