DANISH RICE PUDDING WITH ALMONDS
This is a Christmas favorite that allow us to enjoy the wonderful rich flavors and festive colors of this dessert. It is a rice pudding like no other. On Christmas it is a tradition to add a whole almond to the bowl. The one who gets it, wins a prize.

Steps:
- In a saucepan, bring the milk to a boil, and then add rice. Reduce heat to simmer, and continue cooking for 20 minutes, stirring occasionally. Remove from heat, and set aside to cool to room temperature.
- In a small saucepan, mix the sherry and gelatin; stir over low heat until the gelatin is dissolved. Stir in the sugar until completely dissolved, and then stir in vanilla. Stir into the rice with the chopped almonds. Refrigerate.
- Pour cream into a bowl, and whip until light and fluffy soft peaks appear. Fold into chilled rice pudding. Serve in small bowls, topped with frozen raspberries.

DANISH SWEET RICE
My mom found this recipe years ago, and it quickly became a favorite for special occasions. It's not hard to make--it's just so good, it seems like it needs to be reserved for something special!

Steps:
- For the rice: Bring milk to a boil (watch carefully so it doesn't boil over) in a medium sized saucepan over med. high heat. Add salt and rice, stir, then cover and reduce to low heat.
- Cook rice for about 50 minutes (must cook completely). Be careful it doesn't burn. Cool in refrigerator, slightly covered with plastic wrap.
- While rice is cooling, combine whipping cream, vanilla and sugar in mixer. Whip on medium to high speed until stiff peaks form. Combine cooled rice with cream, cover, and refrigerate.
- For the cherry sauce: Bring cherries to a boil over med. high heat. Combine water and cornstarch, then add to the boiling cherries. Cook together for one minute or until thickened, stirring constantly. Cool in refrigerator.
- When ready to serve, top rice with cherries and toasted almonds. Can be done in individual dishes or in one large bowl.

SWEET RICE
This recipe was given to me, upon request! We have a fresh Mex grill place here that uses sweet rice. This recipe is very similar to this restaurants. Use it on your fresh tortilla salads, or in burritos, on the side, any way you have it, it is darn good (and sweet!) NOTE: The amount of sugar makes it very sweet. You can alter the amount of sugar if you would like, just remember it is supposed to be sweet! Also, let the sugar dissolve in the stock so you won't have sugar that has sunk to the bottom of the pan.

Steps:
- Put a little oil in bottom of pan (maybe about 1/2-1 tablespoon).
- Saute chopped onion until translucent. Add the chopped cilantro (no big stems) and saute a minute more.
- Add the rice, cooking until it is light brown (being careful not to burn).
- Combine the chicken broth and sugar, letting sugar dissolve. Then stir into rice until combined. Bring to a boil.
- Cover and let cook on low, med-low until rice is done, about 25-30 minutes. Fluff with a fork before serving.

- Heat some water until boiling point and pour it in a small bowl. Add the almonds and let them soak in the hot water for about 5-7 minutes.
