- Wash chicken, pat dry with paper towels. Coat chicken with flour.
- Heat oil in large skillet. Add chicken, a few pieces at a time, and brown on all sides. Remove as browned to shallow roasting pan, arranging pieces skin side up. Sprinkle with salt and pepper.
- Preheat oven to 350°F.
- Make sauce: Drain pineapple, pouring syrup into 2-cup measure. Add water to make 1 1/4 cups. In Medium saucepan, combine sugar, cornstarch, pineapple syrup, vinegar, soy sauce, ginger, and bouillon cube; bring to boiling, stirring constantly. Boil 2 minutes. Pour over chicken.
- Bake, uncovered, 30 minutes. Add pineapple slices and green pepper; bake 30 minutes longer or until chicken is tender. Serve with fluffy white rice.
ORANGE JUICE SWEET POTATO CASSEROLE

- Preheat oven to 375°F .
- Scrub, peel and slice your sweet potatoes 1/4" thick. Boil potatoes in salted water until fork tender, drain and set aside.
- Using some butter, grease a 2 quart casserole dish. Cut the peeled bananas into 1/4" slices. In a medium size bowl add the bananas and orange juice, mix to coat. In another small bowl mix together the brown sugar and the cinnamon.
- In the bottom of the prepared casserole dish layer 1/3 of the potatoes, then 1/2 of the bananas, sprinkle 1/3 of the sugar mixture and use 1/3 of the butter. Repeat layering reserving 12 slices of bananas for the top. Finish the third layer with the remaining potatoes and the 12 banana slices and the rest of the sugar mixture and butter. If there is any orange juice remaining in the bowl pour it on top.
- Bake 45 minutes or until bubbly. Yum Yum!

- In a small bowl, stir together soy sauce, brown sugar, orange juice, garlic, and pepper.
- Pour over desired meat or vegetable. Cover and marinade in the refrigerator for as long as you desire.

- Peel, wash and chop sweet potatoes into chunks.
- Bring water to a boil; add ginger, sweet potatoes and red dates and simmer for 12-15 minutes.
- Upon boiling, add slab sugar and boil until sugar dissolves.

- Slice sweet potatoes 1/2 inch thick.
- Grease a heatproof casserole dish with a little butter (or coconut oil).
- Arrange in alternate layers starting with the sweet potatoes dotted with butter and salt, then the bananas sprinkled with brown sugar, and then the crushed pineapple.
- End with the sweet potatoes or the crushed pineapple.
- Combine the pineapple & lemon juices and honey and pour over mixture.
- Bake in 350 F preheated oven for 40 minutes, or until browned on top.
