UNCLE BILL'S CAESAR - CANADIAN STYLE

I had this Caesar Drink in Kelowna, B.C. 5 years ago. I liked the horseradish in the drink, it gave it that little extra "pezzaz". Have been enjoying the drink ever since.

Uncle Bill's Caesar - Canadian Style image

Steps:

  • Rub lemon around rim of glass.
  • Measure celery salt to a flat saucer.
  • Turn glass in celery salt to coat rim.
  • To the glass, add Vodka, Worcestershire sauce, lemon juice, horseradish, Clamato juice, Tabasco sauce and stir well to blend.
  • Place a young stick of celery, pickled bean or pickled asparagus as a garnish and it is good to chew on.
  • Eat and drink slowly.
  • Note: A pickled spicy bean or an pickled asparagus spear are also excellent for a garnish in the drink.
  • Mott's Clamato juice is available in regular or spicy mix.

1/2 fresh lemon, for rub on glass rim
1 teaspoon celery salt, for glass rim rub
2 fluid ounces good quality vodka, more if desired
1/2 teaspoon Worcestershire sauce
1 teaspoon lemon juice, freshly squeezed
1 teaspoon finely grated fresh horseradish or 1 teaspoon pure prepared horseradish
6 fluid ounces mott's Clamato juice (No subsitutes unless you cannot have Clam juice)
2 dashes Tabasco sauce (optional) or 2 dashes red hot pepper sauce (optional)
1 piece of young celery rib, incluing the leaves (from the middle of the stock)

Uncle Bill's Green Split Pea With Hambone Soup image

Steps:

  • Rinse peas well in cold water and add to a large cooking pot.
  • Measure 8 cups of water and add to cooking pot.
  • Bring to boil, remove from heat, cover and let sit for 1 hour.
  • Return to stove and bring back to boil.
  • Add ham bone, carrots, onions, celery, bay leaf, beef bouillon, salt, peppercorns and dried thyme.
  • Reduce heat to simmer, cover and cook for about 1 to 1 1/2 hours, stirring occasionally.
  • Remove ham bone and cut off any remaining ham, cut into bite size pieces and return to soup.
  • Discard ham bone.
  • If there are big pieces of ham in the soup, remove, cut into bite size pieces and return to soup.
  • Remove bay leaf and discard.
  • Adjust seasonings to taste.
  • If you desire a smooth soup, then puree' in batches in a food processor or blender.
  • Or eat the soup without puree'ing.
  • If soup is too thick, add more water to your desired consistency.
  • Beef broth or chicken broth may be added, just reduce the water by the amounts used.
  • Smoked ham hocks are excellent to use instead of a ham bone.
  • If there is not enough ham on the ham bone, then add additional ham of your choice.
  • You may also use about 1/4 teaspoon of Liquid Hickory Smoke, to get a smokey flavor.
  • You may also use whole peas, but it will take a bit longer to cook these peas so that they are tender.

2 cups dried split green peas
2 large carrots, peeled and diced small
2 medium onions, chopped small
2 large celery ribs, include leaves, chop small
1 large bay leaf
2 beef bouillon cubes
1 teaspoon salt
1/4 teaspoon black peppercorns, crushed
1 pinch dried thyme

UNCLE BILL'S COTTAGE CHEESE PEROGIE FILLING

For those who love cottage cheese, these perogies are a delightful treat. The original recipe was given to me by my Grandmother over 55 years ago. I have made some modifications to enhance the taste. Uncle Bill's Cottage Cheese Perogie Filling image

Steps:

  • Squeeze as much liquid that you can from the dry curd cottage cheese and discard.
  • In a mixing bowl, add cottage cheese, finely chopped green onions, beaten eggs, salt and pepper and mix well to blend.
  • Use 1 heaping tablespoon for each perogie.
  • Boil for 2 to 3 minutes or until they float to the surface.
  • Serve with melted butter and sour cream if desired.
  • These perogies freeze well.

3 cups dry curd cottage cheese
1 cup finely chopped green onion
2 large eggs, beaten
1/4 teaspoon salt
1/4 teaspoon black pepper

UNCLE BILL'S BALSAMIC VINEGAR DRESSING

This dressing is a nice change on either Caesar Salads or a regular lettuce/mix salad. Very quick and easy to prepare. For the best taste, use the 6 year old balsamic vinegar.

Uncle Bill's Balsamic Vinegar Dressing image

Steps:

  • In a food processor or blender, add balsamic vinegar, lemon juice, musard, Worcestershire sauce, garlic cloves, shallot, pepper, water and process until smooth.
  • With processor on low speed, add olive oil slowly in a steady stream and process for 30 seconds.
  • Add liquid honey and process to blend for 30 seconds.
  • Store dressing in a container with a lid in the refrigerator.
  • Stir or shake dressing before using.

1/2 cup balsamic vinegar (6 or 12 year old preferred)
1 tablespoon lemon juice, freshly squeezed
1 tablespoon Dijon mustard
2 teaspoons Worcestershire sauce
2 garlic cloves
1 medium shallot, chopped
1/4 teaspoon black pepper
1/2 cup cold water
1 cup extra virgin olive oil
1 tablespoon liquid honey

CLASSIC CANADIAN CAESAR

This drink is very popular in Canada. Take a lick of the celery salt and then a drink of the Caesar through the straw for the proper Caesar experience.

Steps:

  • Wet the rim of a cocktail glass with the lime wedge; set aside for garnish. Place celery salt in a small dish, and press the rim of the glass into the salt to coat. Add ice to the glass.
