EDIBLE COOKIE DOUGH

Have you ever just wanted to eat cookie dough that you are about to put in the oven, then thought better of it because you didn't want to get Salmonella poisoning? Well now you can! This cookie dough is just for eating. I have made this with friends before and they said that they loved the taste. So do I. The leftovers will keep in the freezer for up to 3 months.

Steps:

  • Combine brown sugar and butter in a large bowl; beat with an electric mixer until creamy. Beat in vanilla extract and salt. Add flour; mix until a crumbly dough forms. Mix in milk. Fold in milk chocolate chips and mini chocolate chips.

These are soft, cake-like cookies, best with frosting. Roll them out thickly, and bake no more than 8 minutes. They will stay soft, and everyone raves over them. I use them as cutouts for holidays.

Steps:

  • Cream together the margarine, sugar and eggs. Stir in vanilla, flour, baking soda and salt.
  • Roll out (not too thin) and cut into any shape. Bake at 375 degrees F (190 degrees C) for 8 minutes.
  • I have used confectioner sugar frosting, or buttercream frosting, or even canned frosting ( if I'm desperate). Enjoy!

Steps:

  • In a medium bowl, sift together the flour, salt, and baking powder. Set aside.
  • In the bowl of a standing mixer fitted with a paddle attachment, combine the butter and sugar and beat on medium speed until light and fluffy. Add the egg and vanilla and beat until combined.
  • Add the flour mixture in 2 batches, scraping down the bowl after each addition. Beat until the dough just comes together, being careful not to over mix.
  • Turn out the dough onto a lightly floured surface. Form the dough into a ball, wrap it in plastic, and refrigerate for 30 minutes.
  • Place the ball of dough between 2 pieces of parchment paper and roll out to 1/4-inch thick. Keeping the dough in the parchment, transfer to a cookie sheet and place in the refrigerator for at least 1 hour.
  • Preheat the oven to 350 degrees F.
  • Cut out the cookies in the desired shapes and place on a half-sheet pan lined with parchment paper or an un-greased nonstick cookie sheet, at least 1-inch apart. Transfer to the freezer and chill for at least 15 minutes or until they are firm.
  • Bake until the cookies are light golden brown, about 10 minutes.
  • Let cookies cool completely on the sheets before decorating.

The only effort you will need to make depends on how you choose to decorate the cookies. Because this is such a simple cookie, imperfections in the dough will be hard to hide. For that reason, it is especially important to beat the butter and brown sugar until they are completely smooth. Any lumps of either ingredient will cause noticeable imperfections in the baked cookie and make the cookie more difficult to decorate.

Steps:

  • Sift the flour, baking powder, and salt into a mixing bowl and set aside.
  • Beat the butter in the bowl of a standing mixer fitted with a paddle attachment at high speed until it is light and fluffy, about 3 minutes.
  • Add the brown sugar, crumbling it with your hands as you add it to get rid of any lumps. Mix on medium-high speed until smooth, about 1 minute. Scrape down the sides and bottom of the bowl with a rubber spatula halfway through mixing to ensure that the butter and sugar are well mixed.
  • Add the egg and vanilla and mix until combined. Again, scrape down the sides and bottom of the bowl to make sure that the ingredients are incorporated.
  • Add approximately half the flour mixture and mix on low speed just until the flour is incorporated, about 30 seconds. Repeat with the remaining flour. Scrape down the sides and bottom of the bowl to ensure the flour is fully incorporated.
  • Empty the dough onto a floured surface and gently push it together. Divide the dough in half and form each half into a flat disk 1 to 2 inches thick. Wrap each disk in plastic wrap and let it chill in the refrigerator for at least 1 hour or up to 3 days.
  • Once the dough has chilled, it can be rolled and used as directed (see Rolling Dough, page 10), or frozen in sheets (wrapped tightly on a sheet pan or piece of cardboard with plastic wrap) until needed or up to 2 months.
  • Cut and bake rolled dough as directed.
  • Molasses is what makes brown sugar brown, but when it is exposed to air, it can lose its moisture and harden the sugar. To mitigate against this problem, try transferring leftover brown sugar from the box into a resealable plastic freezer bag and then storing the bag inside an airtight container. If your brown sugar hardens, you can soften it by microwaving it on high for 30 seconds, then crumble it with your hands and use it immediately. If the sugar is still hard or chunky after microwaving, discard it.

  • Still working on low speed, add the flour in 3 to 4 additions, beating only until it is almost incorporated each time before adding more; scrape down the sides and bottom of the bowl a couple of times as you work and then continue to mix until the flour has disappeared into the dough.
  • The dough is ready to be divided (if needed) and scooped or rolled. See my book for suggestions.
  • Or if you'd like to make plain cookies, divide the dough into quarters and shape each piece into a disk. Working with one disk at a time, place the dough between pieces of parchment paper and roll it to a thickness of 1/4 inch.
  • To bake, position the oven racks to divide the oven into thirds, and heat to 350° F. Line two baking sheets with parchment paper or Silicone mats.
  • Working with one disc at a time, peel away the paper on both sides of the dough and return the dough to one piece of paper. Use a 2-inch-diameter cookie cutter (change the size, knowing that the yield will change with it) to cut out as many cookies as you can and place them on the lined baking sheets about 1 1/2 inches apart.
  • Bake the cookies for 19 to 21 minutes, rotating the sheets from front to back and top to bottom at the 10-minute mark, until they are golden brown around the edges and on the bottom.
