Vanilla Wafer Fruitcake Recipe - (4.3/5) image

Steps:

  • 1.Preheat oven to 325 degrees F. 2.In a large bowl, crush vanilla wafers. Add cherries, pineapple, nuts, and raisins; mix well. 3.In another bowl, beat eggs; add sugar, evaporated milk, and salt. Add to fruit mixture and mix well. 4.Cup Cakes: Spoon batter loosely into cupcake pans using paper or foil liners which you have sprayed lightly with oil spray. Bake in center of oven for approximately 30 minutes. Remove from oven and let cool. 5.Cake: Pack into a waxed paper-lined 10-inch tube pan. Decorate top with reserved candied whole cherries and pineapple. Bake approximately 45 minutes. Remove from oven and let stand 10 minutes. Run a sharp knife around edge, turn cake out of pan, then back over again so decorations are on top. Note: Cake and/or cupcakes can be made ahead and frozen; taste improves with age.

1 pound vanilla wafers (cookies)
1/2 pound candied red cherries, cut in half
1/2 pound candied pineapple slices, cut in small wedges
1 pound walnuts, pecans or combination of both, broken in half or coarsely chopped
1/4 pound golden or dark raisins*
2 eggs
1/2 cup granulated sugar
1 (5 ounce) can evaporated milk
1/8 teaspoon salt
Whole candied red cherries (garnish)
Candied pineapple wedges (garnish)
I mix and/or match using dates, dried apricots, dark raisins - whatever I have.

Steps:

  • Preheat the oven to 350 degrees F and grease and flour a tube or Bundt pan.
  • In a large bowl, beat the eggs well. Mix the sugar, vanilla wafers, coconut, pecans and milk into the eggs.
  • Pour the mixture into the tube or Bundt pan. Bake until a toothpick inserted in the center comes out clean, about 1 hour. Let sit in the pan for 10 minutes, and then turn out onto a plate. Allow to cool completely.
  • If desired, heat 1 tablespoon butter in a small saute pan. Cut a 1-inch slice of cake, butter both sides and toast in the butter. Add a dollop of whipped cream and serve with berries. Drizzle with caramel sauce. Repeat with remaining cake slices.

1 cup sweetened flaked coconut

This recipe was given to my mother by an old family friend when I was a young girl. I don't like traditional fruit cake very much, but this one is a great variation with the vanilla wafers. It could be classified somewhere between a cake and a candy.

  • 1. First, you must save the vanilla wafer box for this recipe. Pulverize the vanilla wafers to a powder consistency in a food processor. Drain the cherries well on a paper towel and then chop. Except for the condensed milk, mix all the other ingredients into the powdered vanilla wafers throughly..
  • 2. You will need plastic gloves for the next method since it is a sticky method. Pour in the condensed milk and mix until completely mixed and wet. Place mixture back into the vanilla wafer box and beat down evenly into a square.
  • 3. Allow the fruit cake to set about 4 days to a week. Tear off the vanilla wafer box and cut into small squares. It is rich, so be conservative. Serve. Leftovers should be refrigerated.

1 box of vanilla wafers.
2 c coconut, shredded
1 c pecans, chopped
1/2 to 1 c maraschino cherries, chopped
1 c raisins
1 c dates, chopped

  • Cut pineapple and pecans; leave cherries as they are. Crush the vanilla wafers until fine and add the (thawed) coconut. Add the pineapple, pecans,and cherries to this; also add the chopped dates.
  • Next, melt the butter and marshmallows, then pour over the fruit and vanilla wafer mixture. This will need to be in a large bowl. Mix with a large spoon at first, but then you will need to mix it good using your (clean) hands.
  • After mixing and kneading well, pack it tight in a greased (or non-stick sprayed) bundt pan. It needs to be chilled in the refrigerator for a day, at least. This will keep for a long time. Store in refrigerator.
