BEEF BRISKET

For dinner tonight, serve Tyler Florence's Beef Brisket recipe from Food Network with crispy potato latkes.

Beef Brisket image

Steps:

  • Preheat the oven to 325 degrees F.
  • On a cutting board, mash the garlic and 1/2 teaspoon of the salt together with the flat-side of a knife into a paste. Add the rosemary and continue to mash until incorporated. Put the garlic-rosemary paste in a small bowl and add 2 tablespoons of olive oil; stir to combine.
  • Season both sides of the brisket with a fair amount of kosher salt and ground black pepper. Place a large roasting pan or Dutch oven over medium-high flame and coat with the remaining olive oil. Put the brisket in the roasting pan and sear to form a nice brown crust on both sides. Lay the vegetables all around the brisket and pour the rosemary paste over the whole thing. Add the wine and tomatoes; toss in the parsley and bay leaves. Cover the pan tightly with aluminum foil and transfer to the oven. Bake for about 3 to 4 hours, basting every 30 minutes with the pan juices, until the beef is fork tender.
  • Remove the brisket to a cutting board and let it rest for 15 minutes. Scoop the vegetables out of the roasting pan and onto a platter, cover to keep warm. Pour out some of the excess fat, and put the roasting pan with the pan juices on the stove over medium-high heat. Boil and stir for 5 minutes until the sauce is reduced by 1/2. (If you want a thicker sauce, mix 1 tablespoon of flour with 2 tablespoons of wine or water and blend into the gravy).
  • Slice the brisket across the grain (the muscle lines) at a slight diagonal. Serve with potato pancakes.
  • Using a box grater or food processor, coarsely grate the potatoes and onions. Put the grated potatoes and onions together in cheesecloth or a tea towel and twist it to squeeze out the excess liquid. Put the dry potatoes and onions in a bowl and season with salt and pepper. Fold in the egg whites and chives to bind the mixture together.
  • Heat a large non-stick skillet over medium heat and coat with 1/4-inch of oil. For each pancake, take about 2 tablespoons of the potato mixture and drop into the hot oil; gently flatten with a spatula so they fry up thin and crispy. Fry for 3 to 4 minutes on each side, until golden. Remove to paper towels to drain; season with salt while the potato pancakes are still hot. Continue frying, adding more oil as needed, until all of the mixture is used up. Serve immediately with apple sauce, if desired.

Steps:

  • In a large skillet over medium high heat, saute the beef slices in the oil for 5 minutes, or until well browned. Add the onion, garlic and ginger and saute for 5 more minutes. Then add the green bell pepper, carrot and beef broth. Reduce heat to low and let simmer.
  • Meanwhile, in a separate small bowl, combine the corn flour, sugar, soy sauce and oyster sauce, if desired. Stir thoroughly, forming a smooth paste. Slowly add this to the simmering beef and vegetables, stirring well, and let simmer to desired thickness. Season with salt and pepper to taste.

  • In a large bowl, combine the cornstarch, bouillon, water and soy sauce until smooth; set aside. Cut steak thinly across the grain, then cut slices in half; set aside. , In a nonstick skillet or wok, stir-fry green pepper, onion and garlic in oil for 4 minutes; remove and set aside. Steps:

  • Heat a grill or grill pan to high. In a large bowl or zip-top bag, combine lemon juice, 1/2 teaspoon thyme, bell peppers, zucchini, and onion; season with salt and pepper and marinate 15 minutes.
  • Season steak with salt, pepper, and remaining 1/2 teaspoon thyme. Clean and lightly oil hot grill. Cook steak, flipping once, about 12 minutes for medium. Transfer to a cutting board and tent with foil. Let rest 10 minutes before thinly slicing against the grain.
  • Lightly oil hot grill. Arrange vegetables on grill in an even layer, reserving marinade, and cook until browned and tender, 8 to 10 minutes. Whisk oil and mustard into marinade. Cover and refrigerate half the vegetables and half the dressing for Zesty Pork Sandwiches. Serve remaining vegetables and steak with remaining dressing.

Steps:

  • Remove any bits of fat from the meat. Heat the oil in a large pot over medium high heat. Saute the meat in the oil for 10 minutes, or until browned on all sides. Remove meat and set aside.
  • Add the onion and tomato paste to the pot and saute over medium heat for 5 minutes, or until onion is tender, stirring often. Return the meat to the skillet along with the beef broth, combining with the onion and tomato paste mixture. Reduce heat to low, cover and simmer for 1 to 1 1/2 hours, or until meat is tender.
  • Add the carrots, potatoes, rosemary, thyme, bay leaf and crushed red pepper flakes and simmer, covered, for another 45 minutes. (Note: It may be necessary to add some water if the stew seems too thick.)
  • Finally, add the mushrooms and the peas and allow stew to heat through, about another 10 to 15 minutes. Remove bay leaf and rosemary sprig before serving.

  • Mashed potatoes. If you’ve got steaks in your freezer, this is the perfect opportunity to prepare a side serving of mashed potatoes. Mashed potatoes are such an easy dish to make, and they go well with everything from steak to fish and poultry.
  • Sautéed vegetables. A healthy side dish is often best served alongside steak, and sautéed vegetables are a good option for this. Choose whatever vegetables you like best, like peas, broccoli, carrots, sweet potato, peppers, and onions.
  • Roasted potatoes. Potatoes and steaks go together really well, so it’s no surprise that roast potatoes are a popular side dish for a steak dinner. You can serve them hot or cold, depending on the time of year.
  • Creamed Spinach. This is one of my favourite side dishes! I love the rich and smooth taste that it adds to a meal, and I think that a portion of this will work really well with a serving of steak.
  • Roasted Broccoli with Garlic. This is a delicious and easy side dish that is really good when it comes to preparing ahead of time. I always roast a huge bag of broccoli, then keep it in the fridge until needed.
  • Chopped Salad with Tomatoes and Avocado. Chopped salad is one of my favourite side dishes because you can play around with it so much! I’m a huge fan of adding avocado to salads, as it adds such a lovely creamy texture and a delicious richness to the mix.
  • Sweet Potato Fries. I’m a huge fan of sweet potato fries. They’re simple to make, easy on the stomach, and go really well with a steak. Just cut up a whole new potato (or two) into chips, coat them in seasoned flour and bake at 180°C for 25-30 minutes until golden brown and crispy.
  • Roasted Zucchini and Squash. Roasting vegetables at the same time is a brilliant way to cook them, because it keeps all the flavours in one place. If you do decide to do this, make sure that you’ve prepared your vegetable beforehand, so that they’re ready to go when you put them in the oven.
  • Potato Salad. When it comes to potato salad, I like to serve a big bowl of it alongside my steak! It’s one of those meals that’s guaranteed to be a crowd pleaser.
  • Arugula Salad. Arugula is one of my favourite salad vegetables, so I always try to include a little in my salad when I’m preparing a meal. It works really well with steak, and has a fresh, peppery flavour that contrasts really well with the meat.
