VEGETARIAN & ORGANIC MEATLOAF MUFFINS
Well, OK, technically it's not "meat"loaf, but it's hearty satisfying, savory and in a loaf. Great vegetarian comfort food!

Steps:
- Preheat oven to 350 degrees F.
- In a large bowl, combine cottage cheese, eggs, vegetable oil, soup mix, walnuts, cereal and onion.
- Spoon into a muffin tin.
- Bake for 15 to 20 minutes.
- Let rest for 5 minutes.
REALLY GOOD VEGETARIAN MEATLOAF (REALLY!)
High in fiber and protein, low in fat, easy and really yummy! I've always thought meatloaf looks and smells so delicious and savory so, as a vegetarian, I decided to make a no-meat version! This is basically our favorite meatloaf recipe but with cooked mashed lentils instead of ground meat. The result is a very tasty dinner!

Steps:
- Add salt to water and boil in a saucepan.
- Add lentils and simmer covered 25-30 minutes, until lentils are soft and most of water is evaporated.
- Remove from fire.
- Drain and partially mash lentils.
- Scrape into mixing bowl and allow to cool slightly.
- Stir in onion, oats and cheese until mixed.
- Add egg, tomato sauce, garlic, basil, parsley, seasoning salt and pepper.
- Mix well.
- Spoon into loaf pan that has been generously sprayed with Pam (non-stick cooking spray) or well-greased.
- Smooth top with back of spoon.
- Bake at 350 degrees for 30- 45 minutes until top of loaf is dry, firm and golden brown.
- Cool in pan on rack for about 10 minutes.
- Run a sharp knife around edges of pan then turn out loaf onto serving platter.

- Preheat oven to 375°. Mix the first 5 ingredients. Add beef; mix lightly but thoroughly. Press about 1/3 cupful into each of 12 ungreased muffin cups., Bake 15 minutes. Brush tops with 3 tablespoons ketchup; bake until a thermometer reads 160°, 5-7 minutes. If desired, serve with additional ketchup. , Freeze option: Bake meat loaves without ketchup; cover and freeze on a waxed paper-lined baking sheet until firm. Transfer meat loaves to an airtight freezer container; return to freezer. To use, partially thaw in refrigerator overnight. Place meat loaves on a greased shallow baking pan. Spread with ketchup. Bake in a preheated 350° oven until heated through.

- Rinse and strain the lentils. Place them in a pot with 3 cups of vegetable broth or water. Bring to a boil and season with salt. Reduce the heat to medium low and simmer, uncovered for at least 40 minutes or until the water is absorbed and the lentils are slightly mushy. Stir frequently and add a bit of water if they begin to dry out before 40 minutes. Mash the lentils slightly with a spoon when ready.
- While the lentils are cooking, combine breadcrumbs and milk in a large bowl and let soak. Heat 2 tablespoons olive oil in a large skillet over medium heat. When hot, add the onion and cook, stirring occasionally, until soft but not brown, 5 to 7 minutes. Add the celery and cook 3 to 4 minutes longer. Add the mixture to the breadcrumbs.
- In a small pan, toast walnuts over medium-low heat, shaking the pan occasionally, until fragrant, about 5 minutes. Add the nuts to the breadcrumb mixture along with the carrot, Parmesan, 1/4 cup ketchup, thyme, oregano, salt, pepper, and lentils. Mix thoroughly and divide evenly amongst muffin tins.
