BANANA OATMEAL

One of my favorite breakfasts. I invented this version, but my Mom deserves some credit for it too. It can be mixed the night before, and refrigerated in a covered bowl/microwave safe container. In the morning all you have to do is microwave it and mix in the peanut butter.

Banana Oatmeal image

Steps:

  • Break banana into chunks and put into a small blender jar.
  • Add the skim milk.
  • Liquify in blender.
  • Put the dry oatmeal in a microwave safe bowl. (If you want to mix it ahead of time, use a small microwave safe dish which has a lid).
  • Pour the banana mixture on top of the oatmeal.
  • Stir well, to incorporate all the oatmeal.
  • Microwave (uncovered) on high setting for 90 seconds.
  • Stir.
  • Microwave again for about 90 seconds.
  • If it starts to rise over the top of the bowl, stop the cooking, because it is most likely already done!
  • Stir in peanut butter.

Steps:

  • Bring milk, salt, vanilla, and brown sugar to a boil.
  • Add oats and allspice.
  • Reduce to medium boil for 5 minutes.
  • Add banana, turn off heat, let set for 2-3 minutes.
  • Put into 2 bowls, sprinkle brown sugar for color, and place 2 banana slices.

Baked Banana Oatmeal image

Steps:

  • Preheat oven to 375.
  • Spray an 8 inch square pan with cooking spray.
  • Stir together oats, baking powder, salt and cinnamon.
  • Add sugar, an egg, 1 mashed banana, milk and vanilla. Stir just until combined.
  • Pour into prepared pan and top with a layer of sliced bananas.
  • Bake for 25 minutes.
  • Top with brown sugar and broil until golden. About 3-4 minutes, but watch it carefully!

2 cups rolled oats or 2 cups quick oats
1 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon cinnamon
3 tablespoons sugar
1 egg, beat
2 -3 bananas (1 mashed and 1 or 2 sliced)

WHIPPED BANANA OATMEAL

I saw a video on how to get really creamy whipped like oats and here is my take on it. Any sweetener or toppings can be subbed here with great results. I like to soak my oats overnight for quick cooking- I soak them in 1/2 cup water with 1 tbs plain yogurt and add 1/2 cup water in the morning when I cook them. They take 5 minutes.

Whipped Banana Oatmeal image

Steps:

  • combine oats and water or milk with banana, salt and cinnamon if using (sometimes i add raisins now to plump them up too).
  • bring to a simmer over medium high heat and reduce to medium.
  • stir vigorously and oats will take on a creamy look and not have as much of a shape individually, banana will mostly get beaten into them.
  • cook until the consistency you like or most liquid is absorbed.
  • top with nuts, syrup and cream, and the other half of the banana sliced if you want.

Strawberry Banana Oatmeal image

Steps:

  • Cut 1 strawberry and 1/2 banana into tiny pieces, (the smaller the strawberries the better) and put in a bowl, then mash. (I used the back of a spoon).
  • Put the oatmeal in a bowl and mix the brown sugar into it.
  • Put the milk in the microwave for about 30 seconds.
  • Mix the milk in to the oatmeal mixture.
  • Cut 1 strawberry and the rest of the banana into slices. (so that there is about twice as many banana slices.
  • Layer the banana, then strawberry, then banana on top.
  • Cut the 3rd strawberry to slide on the side of the bowl.
  • Enjoy! I like to eat with orange juice.
