VIRGINIA'S CINNAMON SAUCE (BREAD PUDDING, ICE CREAM, CREPES, ETC
My favorite recipe from my grandmother, who would make this to go over bread pudding and other desserts. So simple to make, but special enough for a holiday table (or over bread pudding to celebrate the birth of a child in our family!). An absolute family tradition; I haven't seen anything else like it. I've come to find that it's a pretty flexible recipe -- you can add more or less cinnamon, sugar, or even other spices (nutmeg, ginger, and cardamom are all good in addition to the cinnamon). I like mine a bit thicker so I use less water than called for here (2 to 2 1/2 cups), but most in my family make it just like this. Quick, easy, and really yummy.

Steps:
- In a medium saucepan, combine the sugar, cornstarch, salt, and cinnamon.
- Whisk 3 cups of water into the dry ingredients.
- Bring to a rolling boil over medium-high heat, stirring frequently.
- Remove from heat and stir in vanilla. Sauce will thicken and turn clear as it cools. Serve warm or cool.
- Covered, the sauce will keep in the refrigerator for some time and reheats well in the microwave. Try it over pancakes or french toast, ice cream, blintzes, bread pudding, apple pie -- .

"THE PROOF IS IN THE PUDDING" BREAD PUDDING WITH VANILLA ICE CREAM

- Preheat the oven to 350 degrees F.
- Slice bread into small cubes, add to a medium bowl and toss with the melted butter. Add the raisins, chocolate chips and raspberries and stir to distribute.
- In a medium bowl combine the eggs, whole milk, condensed milk, sugar and vanilla together until well mixed. Pour over the bread mixture and press down gently to help the bread absorb the egg mixture.
- Transfer the bread mixture into a large oven proof dish and bake in the preheated oven for about 45 minutes or until the top springs back when touched. Remove from the oven and lightly sprinkle with the rum. Carefully ignite with kitchen lighter or a long kitchen match. Serve in individual bowls with a scoop of vanilla ice cream on top.

Steps:
- Whisk flour, milk, water, eggs, and salt together in a medium-sized bowl until smooth and all lumps are gone. Mix in melted butter.
- Heat a lightly greased frying pan over medium heat. Spoon in about 1/2 cup batter over the bottom of the pan in a very thin layer, about the size of a regular tortilla. Cook crepe until the bottom is a light golden brown, about 2 minutes. Flip using a spatula and cook, 1 to 2 minutes more. Repeat with remaining batter.
- Scoop 1 to 2 scoops vanilla and coffee ice cream onto each crepe. Fold crepes over like burritos and flip upside-down so that they stay closed. Top with whipped cream and drizzle with chocolate syrup.

AMISH CINNAMON PUDDING
This was written in an old cookbook I bought at an auction..I decided to try it..since I was so vague about instructions..first batch failed miserably..only used 1 1/2 cups flour..and so I tried again..below is the corrected recipe and I hope you enjoy it..the brown sugar sinks to the bottom and makes a bowl licking sauce and the batter rises to the top..pecans add just the right amount of texture..wish I could learn how to send a picture...Hope you enjoy it!!

- Mix sauce ingredients first and set aside.
- For sauce:.
- In a medium sauce pan, combine brown sugar, water, butter and salt.Bring to a boil and boil for 5 minutes.Remove from heat and add vanilla.Stir well and set aside.
- BATTER:.
- In a mixer bowl, combine flour, sugar, baking powder, cinnamon, and salt. Combine the milk, melted butter, and vanilla and add all at once to the flour mixture. blend quickly. Spread in an oiled 9x13 pan, then pour the reserved sauce mixture over the tip.DO NOT MIX IN -- Scatter pecans over the top --
- Bake for 40-45 minutes or until the center bubbles up.
- Serve warm with cream or ice cream -- I used Cool Whip --
- I must say -- this pudding reheats well in the microwave --
- Pour Step1 over it and sprinkle with a few chopped nuts, if desired.
- Bake 45 minutes at 350*.
- Serve with whipped cream or thawed non dairy whipped topping.

- Preheat oven to 375 degrees F (190 degrees C). Grease a 2-quart baking dish.
- In a mixing bowl, whisk 3 eggs, white sugar, 2 tablespoons of light brown sugar, 1/2 teaspoon of cinnamon, 1/4 cup of butter, and 3 cups of whole milk together, and gently stir in the bread cubes and raisins. Lightly spoon the mixture into the prepared baking dish.
- Bake in the preheated oven until browned and set in the middle, 50 to 55 minutes; cover the dish with foil after 30 minutes to prevent excessive browning. Let the pudding stand for 10 minutes before serving.
