GREAT EASY WAFFLES

This recipe has been handed down in my family and has become a favorite. If you have leftover waffles, they are great to freeze and then toast at a later time. I usually make a double recipe and then have plenty of leftovers for the kids to have for breakfast before school.

Steps:

  • Preheat waffle iron according to manufacturer's instructions. In a large bowl, whisk flour, sugar, baking powder, and salt; set aside.
  • In a small bowl, whisk milk and eggs; pour over flour mixture, and whisk gently to combine (don't overmix). Gently whisk in butter.

1/4 teaspoon salt
1 cup milk

4 tablespoons (1/2 stick) unsalted butter, melted
Maple syrup and butter, as desired, for serving

CHEESECAKE WAFFLE CUPS

I've found a fun way to serve cheesecake. The crunchy store-bought "bowls" hold a smooth cream cheese filling that's layered with cherry pie filling. They're a snap to prepare and attractive, too. Blueberry pie filling would be a wonderful alternative.-Janice Greenhalgh, Florence, Kentucky

Steps:

  • Blend all ingredients in a blender at low speed until totally smooth, about 1 minute. Chill batter, covered, 1 hour.
  • Heat pizzella maker and lightly brush top and bottom with oil. Pour a generous tablespoon batter on each side (left and right) of pizzella maker and spread quickly with back of a spoon to cover molds. Close cover and cook until golden, about 1 1/2 minutes.
  • Working quickly (pizzella is pliable only while still hot), peel off 1 pizzella and fit into 1 large ramekin, then press a small ramekin inside to shape pizzella. Shape second pizzella using second pair of ramekins. Remove ramekins when waffle cups are hardened, about 2 minutes. Make more waffle cups with remaining batter.

1 cup water
3 tablespoons vegetable oil
1 tablespoon lightly beaten egg white
1/4 teaspoon almond extract
1 cup all-purpose flour
2/3 cup confectioners sugar
2 tablespoons finely ground blanched almonds
6 tablespoons powdered milk
Special Equipment
an electric pizzella maker, 2 large (3 1/2-inch) ramekins, and 2 small (2 1/2-inch) ramekins

CLASSIC CRISPY WAFFLES

The secret to these super-crispy waffles is using a little vegetable shortening. Make a large batch on the weekend, then grab and reheat on a rushed morning.

Steps:

  • Preheat a waffle iron to medium-high. Preheat the oven to 200 degrees F (to keep cooked waffles warm). Whisk together the flour, sugar, baking powder and salt in a large bowl. Whisk together the milk, butter, shortening and eggs in another bowl. Pour the milk mixture into the flour mixture and gently stir until just incorporated (it's okay if there are some lumps).
  • Lightly brush the top and bottom of the waffle iron with butter. Fill the waffle iron about three-quarters of the way full (some waffle iron should still be showing). Close the lid gently and cook until the waffles are golden brown and crisp, 6 to 7 minutes. Keep the cooked waffles warm in the oven or covered with foil on a plate while you make the remaining waffles.
  • Serve with maple syrup, butter, sugar or fruit preserves.

2 cups all-purpose flour
2 tablespoons granulated sugar
1 tablespoon baking powder
1 teaspoon fine salt
1 1/2 cups milk
4 tablespoons melted unsalted butter, plus more for brushing waffle iron
4 tablespoons vegetable shortening, melted
2 large eggs
Pure maple syrup, soft unsalted butter, confectioners' sugar or fruit preserves, for topping
