CREAM CHEESE CUTOUTS

Decorating cookies always puts me in a happy mood. Cookies from this recipe don't rise a lot or lose their shape. -Julie Dawson, Galena, Ohio

Cream Cheese Cutouts image

Steps:

  • In a large bowl, cream butter, cream cheese, sugar and salt until light and fluffy. Beat in egg and vanilla. Gradually beat in flour. Refrigerate, covered, 1-2 hours or until firm enough to roll., Preheat oven to 375°. On a lightly floured surface, roll dough to 1/8-in. thickness. Cut with floured cookie cutters. Place 1 in. apart on ungreased baking sheets., Bake 7-8 minutes or until edges are lightly browned. Cool on pans 1 minute. Remove to wire racks to cool completely., In a small bowl, beat confectioners' sugar, butter, vanilla and enough milk to reach desired consistency. If desired, add food coloring. Decorate cookies with frosting and sprinkles.

WANDA'S CUT OUT CHRISTMAS COOKIES

My best friend Darrell's mother, Wanda makes these every Christmas. This is the best rolled sugar cookie I've ever tasted! They are so light and delicate, they practically melt in your mouth! I have no idea how many this recipe makes, I'm guessing 3 dozen. Prep time does not include 2 hour chill time.

Steps:

  • In a mixing bowl, cream sugar and butter until fluffy.
  • Add oil, vanilla and eggs.
  • Mix well.
  • Stir in dry ingredients; mix well.
  • Cover and chill for at least 2 hours.
  • Preheat oven to 375.
  • Roll out dough on a lightly floured surface to about 1/4 inch thickness.
  • Cut out dough with cookie cutters and place on an ungreased cookie sheet.
  • Bake 5-8 minutes or until lightly browned.
  • Cool on wire racks.
  • Decorate with frosting or sprinkles of your choice.

My very favorite Christmas cookie!! Using a rolling pin with guides really helps roll the cookies even. Use plenty of flour when rolling out and flour the rolling pin also. I bought my rolling pin from Amazon.com.

Wanda's Sour Cream Cut out Cookies & Frosting image

Steps:

  • Whisk first four ingredients together in a large bowl; set aside.
  • In large mixer bowl, mix sour cream and butter until creamy.
  • Add sugar, eggs and vanilla and mix well.
  • Add dry ingredients and mix until well blended.
  • Divide dough in half and wrap each half in plastic wrap; refrigerate for at least 2 hours.
  • Flour area where you are going to roll cookies and flour the rolling pin with plenty of flour.
  • Roll cookie dough to 1/4 " thickness.
  • Cut out cookies.
  • Place on cookie sheet and bake at 350 degrees for about 8 minutes.
  • Do not let cookies brown.
  • Mix all frosting ingredients together until smooth.
  • Frost cookies and decorate.

Steps:

  • Sift together dry ingredients: flour, baking powder and pinch of salt.
  • In a mixing bowl, cream butter and sugar with electric mixer, till light and fluffy.
  • Add eggs, light cream and flavoring.
  • Turn out dough onto plastic wrap; flatten with hands chill in refrigerator for 1 hour.
  • Remove dough and roll on on a lightly floured board 1/8" thick.
  • Press with favorite cookie cutters.
  • Preheat oven at 425 degrees and Bake for 12-15 minutes.
  • Dust with confectionery sugar or frost with favorite icing.
