Cheesy Crab Bites image

Steps:

  • Pour the oil into a large heavy-bottomed pot fitted with a deep-frying thermometer.
  • Combine the mozzarella, cream cheese, garlic salt and crushed red pepper in a food processor. Pulse until a thick paste is formed, about 30 seconds. Set aside.
  • On a lightly floured surface, roll the pizza dough to form a 16-by-12-inch rectangle. Use a 3-inch round cutter to cut out 10 to 12 rounds of dough. Use your fingertips to gently stretch each round of dough into a 4-inch circle. Top a round of dough (slightly off-center) with 1 heaping teaspoon of the cheese mixture and 1 teaspoon crabmeat. Fold the dough in half over the filling to create a half-moon. Press the edges together to seal the pocket and crimp with the prongs of a fork. (See Cook's Note.) Repeat this process with the remaining circles and filling.
  • Preheat the vegetable oil to 350 degrees F and line a plate with paper towels.
  • Working in batches, carefully lay the pizza pockets in the hot oil. Fry until deeply golden brown, 1 to 1 1/2 minute on each side. Remove from the hot oil to the lined plate to cool slightly.
  • Garnish with fresh parsley.

  • Mix all ingredients.
  • Spread each cracker with 2 tsp cheese mixture.
  • Place on cookie sheet covered with aluminum foil.
  • Broil 4 inches from heat source for 1-2 minutes or until lightly browned.

Steps:

  • Toast English muffins in a toaster oven. Place muffin halves on toaster oven tray. In a small bowl, combine the crab, cheese sauce, butter, mayonnaise and garlic powder. Spread over the muffin halves. Cut each into four pieces. , Bake in toaster oven at 350° for 8-10 minutes or until lightly browned. Sprinkle with paprika if desired.

Steps:

  • Heat oven to 400°F. Line large cookie sheet with cooking parchment paper.
  • In medium bowl, stir together 1/2 cup mayonnaise, the egg, chives, Worcestershire sauce, 1 teaspoon Dijon mustard, seafood seasoning and 1 teaspoon lemon juice. Fold in crabmeat and bread crumbs until well blended (mixture will be moist). Using measuring tablespoon, shape mixture into 36 (1 1/2-inch) balls. Place on cookie sheet.
  • Bake 16 to 20 minutes or until lightly browned and hot in center. Cool 5 minutes.
  • Meanwhile, in small bowl, stir together Lemon-Garlic Sauce ingredients until blended. Serve bites with sauce and lemon wedges.

Steps:

  • Soften butter and cheese spread at room temperature.
  • Mix together well in mixer with seasonings.
  • Fold in crab meat and spread on English muffin halves.
  • Cut with a sharp knife into four sections and freeze (they cut easier if they're slightly frozen first).
  • Flash freeze individually on a cookie sheet until frozen.
  • Package in freezer bags and store in the freezer.
  • Preheat oven to 400ºF degrees.

  • PANKO: Position a rack in the center of the oven and preheat the oven to 400ºF. Grease a mini muffin pan with cooking spray. Mix together the panko, parmesan cheese, and melted butter. Place roughly 2 teaspoons of the panko mixture in the bottom of each muffin cup using your fingers or the bottom of a measuring teaspoon (or tablespoon) gently pack into a tight shape.
  • CRAB MIXTURE: Combine the crab meat, cream cheese, mayonnaise, egg, sour cream garlic powder, smoked paprika, old bay seasoning, lemon juice + zest, chopped chives, and ¼ teaspoon kosher salt, and ¼ teaspoon pepper. Spoon roughly 1 tablespoon of the crab mixture into each mini muffin cup.
  • BAKE: Until the edges begin to turn golden, 14-18 minutes. Allow the crab cakes to cool in the pan for several minutes before attempting to remove them. You can run an offset spatula or a pairing knife along the edges to help pop out the bites. Serve crab bites warm or allow them to cool to room temperature before serving. I like to top them with more chopped chives before serving and serve with lemon wedges and prepared sauce.
