WARM-APPLE SALAD

Tart Granny Smith apples infuse this simple salad with classic fall flavor.

Warm-Apple Salad image

Steps:

  • Heat broiler with rack 8 inches from heat. In a large bowl, whisk together oil, vinegar, and mustard; season. Add apples and toss to coat. Transfer to baking sheet and broil until browned at edges and softened, 5 to 8 minutes. Toss lettuce with apples and any juices. Sprinkle with chives.

2 tablespoons cider vinegar
1 teaspoon grainy mustard
Salt and pepper

8 cups torn red leaf lettuce

Warm Chestnut and Apple Salad image

Steps:

  • Toss arugula and endive in large bowl. (Can be prepared 6 hours ahead. Cover with damp kitchen towel; chill.)
  • Heat 1 1/2 tablespoons olive oil in large skillet over medium-high heat. Add apples and shallots; sauté 5 minutes. Add chestnuts; sauté 1 minute. Stir in vinegar, scraping up any browned bits. Remove from heat; stir in walnut oil and remaining 1 1/2 tablespoons olive oil. Season with salt and pepper. Pour chestnut mixture over arugula mixture; toss. Divide salad among 8 plates.

6 cups (packed) coarsely torn curly endive
3 tablespoons extra-virgin olive oil, divided
1 1/2 medium Granny Smith apples, peeled, cored, cut into 1/2-inch dice
3/4 cup thinly sliced shallots
1 1/2 cups steamed chestnuts (from two 7.25-ounce jars), coarsely chopped
3 tablespoons red wine vinegar
41/2 tablespoons walnut oil

Warm Apple & Pistachio Spinach Salad image

Steps:

  • In a large skillet, melt butter over medium-high heat. Add apples and ginger; cook and stir until apples soften and begin to caramelize, 3-5 minutes. Stir in pistachios and Dijon mustard. Reduce heat; simmer 5 minutes, stirring occasionally., Pour two-thirds of apple mixture over spinach. Add spoonfuls of ricotta cheese; top with remaining apple mixture. Drizzle with honey. Add fresh pepper to taste.

Steps:

  • In a large skillet, cook bacon until crisp. Remove to paper towels. Drain, reserving 2 tablespoons drippings. , In same skillet, combine vinegar, brown sugar and reserved drippings. Bring to a boil; cook and stir until sugar is dissolved. Cool slightly., Meanwhile, in a serving bowl, combine spinach, apples, onion and bacon. Drizzle with warm dressing; toss to coat. Serve immediately.
