Warm Raspberry Red Wine Sauce For Fish Chicken Or Pork Recipes

RED RASPBERRY SAUCE

This simple, three-ingredient sauce is very versatile. Right now I am enjoying it with freshly baked angel food cake, but I would love to try it with grilled peaches, and also with something chocolatey! I also think it would be nice with chicken or maybe a wheel of warm brie. It is a chunky sauce, with the texture determined by how much you crush the berries when you mix it. I more or less mashed mine, but I think leaving at least some of the berries whole would make a more elegant sauce. Add in a bit of your favorite liqueor or extract to vary the possibilities even more (I tried it with some Triple Sec - very good!). This recipe originates from The Complete Cooking Light Cookbook, and it makes approximately 1 1/2 cups.

  • Preheat oven to 400 degrees. Whisk together flour, salt, pepper, and cinnamon in a small bowl; set aside 2 tablespoons. Sprinkle remaining flour mixture over pork chops, turning to coat; shake off excess.
  • Heat oil in a large ovenproof skillet over medium heat until hot but not smoking. Add pork chops, and brown well, 3 to 4 minutes per side. Transfer skillet to oven; roast pork chops until they are cooked through, about 5 minutes more.
  • Transfer pork chops to a plate; cover to keep warm. Place skillet over high heat; add wine, and deglaze, scraping up browned bits on bottom. Whisk reserved flour mixture into stock; pour into skillet while whisking mixture in pan. Stir in dried fruits. Continue to cook until sauce has thickened and fruits are tender, about 15 minutes more. Season with salt and pepper; serve sauce over pork chops.

ORANGE MARMALADE MARINATED SALMON, CHICKEN OR PORK

I just love Salmon and I'd say this is my favorite to date. This has an Asian touch. Lots of flavor. I did make this with Salmon but its possibilities are endless like tuna, Mahi Mahi, shrimp, orange roughy... I bet grilled pineapple in this marinade along with the fish or meat would be great! Cooking in a basket will caramelize the fish giving it a crispness and ease in turning it and cooking in foil will keep it moist as well as ease in flipping the fish. Cooking time is up to you I like my salmon very tender so I tend not to overcook it. This is great served on white rice. Leftovers would be great on a salad. The picture here is the salmon made under the broiler.
