OVEN-ROASTED SALMON, QUINOA AND ASPARAGUS WITH WASABI OIL

Seasoned oils like the wasabi oil I buy at my local specialty grocery can embellish a simply cooked piece of fish, a bowl of grains or steamed vegetables. Here the salmon is cooked in the oven, and the wasabi seasoned oil (mine is canola oil-based) is drizzled on just before serving. It's served with quinoa, which you can also dress with the oil, and vegetables in season.

Oven-Roasted Salmon, Quinoa and Asparagus With Wasabi Oil image

Steps:

  • Preheat the oven to 300 degrees. Cover a baking sheet with foil and lightly oil the foil. Place the salmon on top, skin side down. Season with coarse salt and pepper. Fill a roasting or baking pan with boiling water and place it on the oven floor.
  • Place the salmon in the oven and bake until the fish flakes and white bubbles of protein appear on the surface, 10 to 20 minutes, depending on the size of the fillets. Remove from the heat.
  • Meanwhile, snap off the woody ends of the asparagus and steam for 5 minutes, until tender. Remove from the heat.
  • Place a serving of quinoa on each plate, or place a mound of it on a platter. Top with the salmon fillets and arrange the asparagus on the side. Drizzle about a teaspoon wasabi oil over the fish and the asparagus, and serve.

Somen Noodle Sushi with Wasabi Oil and Soy Syrup image

Steps:

  • In a large mixing bowl combine first 6 ingredients. Check for seasoning. Using a sushi mat, place one sheet of nori, shiny side down. Lay down a thin layer of noodle mix on the bottom third of the nori. Arrange cucumber and peppers on the noodles and roll tightly. Moisten the top edge of the nori to "glue" the roll.
  • Plating: Slice sushi with straight cuts and some on the bias. Drizzle soy syrup and wasabi oil on a large, white plate. Garnish with gari, sliced scallions and sesame seeds.
  • Wasabi Oil: In a stainless steel bowl, whisk wasabi, mirin, and sugar. Add water until a loose puree is achieved. Whisk in oil. For extra spicy, use less oil.;
  • Soy Syrup: Combine all and reduce at a simmer until a syrup consistency is achieved, about a 70 percent reduction. Let cool.

1/2 pound somen noodles, blanched, refreshed
1/4 cup chopped scallions, green part only (save a little for garnish)
2 tablespoons thin soy sauce
1 tablespoon rice wine vinegar
2 tablespoons wasabi oil
1/4 cup gari, julienne (pickled ginger, save a little for garnish)
1/2 cucumber, seeded, julienne

1/4 cup toasted sesame seeds, for garnish
1/2 cup wasabi powder
1 tablespoon mirin
1 teaspoon sugar
Water
1/2 cup canola oil
2 cups thin soy sauce

Grilled Ponzu-Marinated Snapper with Wasabi Oil and Soy Marinated Ginger image

Steps:

  • For the marinade, mix ponzu, ginger, soy and sesame oil. Marinate fish for only 10 minutes. Over-marinating will fully cook the fish.
  • On a hot grill, season the fish and mark both sides. The fish will take about 8 minutes to fully cook.
  • For the salad, mix the neutral vinaigrette with the gari and toss with pea sprouts. Place a small mound in the middle of the plate and top with grilled snapper. Drizzle plate with soy ginger and wasabi oil.
  • Whisk all together.
  • Bring vinegar, soy sauce, brown sugar, and scallions to a boil. Add ginger, bring back to a boil and simmer for 5 to 10 minutes.
  • In a stainless steel bowl, whisk wasabi, mirin, and sugar. Add water until a loose puree is achieved. Whisk in oil.
  • For extra spicy, use less oil.

1/2 cup ponzu
1 tablespoon minced ginger
1/4 cup thin soy sauce

Grilled Chicken Breast Skewers With Wasabi image

Steps:

  • Mix the wasabi and vegetable oil in a bowl; set aside.
  • Skewer the cubes of chicken (about 3 pieces per portion) so the chicken covers about 4 inches of skewer. Lightly season all sides with salt.
  • Preheat a grill to medium-hot. Grill chicken breast skewers for about 3 minutes, turning once. Brush a thick layer of the wasabi mixture on top of the chicken. Grill for about 2 minutes more, turning once, and brushing on more wasabi. The chicken meat will turn white when ready. Serve immediately.

¼ cup wasabi
1 Tbsp. plus 1 tsp. vegetable oil
3 boneless, skinless chicken breasts (about 1 pound), cut into 1-inch cubes
Salt

WASABI-SOY VINAIGRETTE

This all-purpose salad vinaigrette is reminiscent of the wasabi-tinged soy sauce you might have with a California roll. Soy sauce, rice vinegar and sesame oil waltz in time, while the wasabi paste adds nose-clearing excitement. As with any recipe, feel free to adjust the ingredient amounts to your taste preferences, especially the wasabi, which can be scaled down or up. Be sure to shake if it's been sitting in the fridge, as it wants to separate.

Wasabi-Soy Vinaigrette image

Steps:

  • In a small liquid measuring cup or a glass jar with a tight-fitting lid, combine 1/4 cup water, the garlic, sugar, soy sauce, rice vinegar, sesame oil and wasabi paste. Whisk to combine, or, if using a jar, seal tightly and shake vigorously until emulsified. Taste and add more wasabi if you like; the wasabi flavor will intensify as the vinaigrette sits.
  • Use immediately or refrigerate in an airtight container for up to 1 week. This tastes great with any green salad, of course, but also with raw, crunchy vegetables, like cucumbers, sugar snap peas and thinly sliced asparagus.

2 large garlic cloves, finely grated
2 tablespoons granulated sugar
2 tablespoons soy sauce
2 tablespoons rice vinegar
1 tablespoon toasted sesame oil
1 1/2 teaspoons wasabi paste, plus more to taste
