WEIGHT WATCHERS CHOCOLATE MARSHMALLOW FUDGE
This chocolate treat is quick and easy to make. I don't like to sacrifice taste even when I'm watching my weight. This recipe is perfect for those times when I'm craving chocolate, but I don't want all of the extra calories. Update 9/1/08: Despite what one reviewer states, my posting of this recipe was in no way meant to "fool" you. I do cut mine in 36 pieces. It is perfect for those times when I am craving chocolate. If I can't control my cravings then I just better not make them. Weight Watchers, or any diet, is about portion control and nothing is going to be low-fat or good for you if you eat too much of it.

Steps:
- Coat an 8x8-inch pan with cooking spray.
- Stir together sugar, evaporated milk and margarine. Bring to a boil in sauce pan, reduce heat to medium-low and cook 3 minutes, stirring constantly.
- Stir in chocolate and marshmallows. Remove from heat and stir until smooth.
- Pour into pan and refrigerate until firm, about two hours. Cut into 36 squares and serve. (Leave fudge in refrigerator or freezer for a firmer consistency).
- If you are following Weight Watchers, this has 3 points per serving.

CHOCOLATE MARSHMALLOW FUDGE
Honest, this is the best chocolate fudge. Very, very creamy and just the right amount of chocolate taste. My stepmom used to make this fudge all the time(especially at Christmas). I also give this out for a gift at Christmas. Everyone loves it and wants the recipe. Enjoy.

Steps:
- Combine sugar, evaporated milk, and butter in medium sauce pan.
- cook to soft ball stage Once it reaches the soft ball stage, take off heat and add chocolate morsels, marshmallow cream, vanilla, and nuts (I leave out the nuts) Stir until it is all combined well and melted.
- Pour into a aluminum foil lined 9x13" dish.
- Let cool When cooled, cut& don't forget to peel off the foil.

I love sweets, but it's always hard to fit them into a diet. This fudge is really tasty and simple and a good way to take the edge off your sweet tooth! Cooking time is actually refrigeration time.

- Spray bottom of an 8x8 pan with nonstick cooking spray.
- Bring evaporated milk, splenda, and margarine to a rolling boil. Reduce heat to med-low and continue cooking for approx 3 minutes longer, stirring constantly.
- Stir in chocolate chips and marshmallows. Remove from heat. Stir until smooth.
- Pour into pan and refrigerate until firm.
- Enjoy without feeling guilty!
