Whole-Wheat Spaghetti with Shrimp and White Beans image

Steps:

  • Bring a large pot of salted water to a boil. Add the spaghetti and cook as the label directs. Reserve 2/3 cup cooking water, then drain.
  • Meanwhile, heat the olive oil in a large skillet over high heat. Add the shallot and cook, stirring occasionally, until slightly softened, about 2 minutes. Add the beans, cherry peppers, garlic, red pepper flakes and ½ teaspoon salt; cook, stirring occasionally, until the garlic starts browning, 2 to 3 minutes. Add the shrimp and cook, stirring occasionally, until opaque, about 3 minutes. Add the wine and cook until slightly reduced, about 2 minutes.
  • Add the pasta and lemon zest and juice to the skillet and toss to coat. Gradually add the reserved cooking water as needed to loosen. Add the parsley, season with salt and pepper and toss.

Shrimp Scampi and Pasta with Herb Breadcrumbs image

Steps:

  • Bring a 6- to 8-quart soup pot of generously salted water to a boil.
  • For the topping: In a large stainless steel skillet, heat the butter over medium heat until melted and slightly browned but not burned. Add the breadcrumbs. Using a wooden spoon, stir the breadcrumbs to coat with the brown butter, and toast until golden brown, 2 to 3 minutes. Remove from the heat. Stir in the chives, oregano and lemon zest. Season to taste and set aside.
  • For the pasta: Meanwhile, heat the oil in a large saute pan over high heat until shimmering. Season the shrimp all over with salt and pepper. Add the shrimp to the pan in one layer and cook for 1 minute. Turn and cook 1 more minute. Using a slotted spoon, transfer the shrimp to a bowl.
  • Add the garlic and shallot to the pan and cook for 1 minute. Add the wine, lemon juice, pepper flakes and oregano and simmer for 3 minutes. Whisk in the butter piece by piece, thoroughly incorporating each piece before adding the next. Taste and season with additional salt and pepper as needed. Add the shrimp back to the pan and simmer until completely cooked through, about 2 minutes. Stir in the parsley. Remove the skillet from the heat.
  • Add the capellini to the boiling water and cook until just tender, about 4 minutes. Reserve 1 cup of the cooking water and transfer the capellini to a colander to drain. Toss the capellini with the shrimp and parsley, adding some of the pasta water if necessary to keep it moist. Transfer to a large serving bowl or into small bowls as individual servings.
  • Top with herb breadcrumbs.

Lemon Spaghetti with Shrimp image

Steps:

  • Make the shrimp: In a medium saute pan, heat the olive oil over medium-high heat. Season the shrimp with the salt and pepper; add to the preheated pan in a single layer. Cook for 2 to 3 minutes per side, or until pink and cooked through. Set aside.
  • Make the pasta: Cook the pasta in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally to prevent sticking, about 8 minutes. Drain, reserving 1 cup pasta water. Meanwhile, whisk the olive oil, parmesan and lemon zest and juice in a large bowl to blend.
  • Toss the pasta with the lemon sauce, shrimp and the reserved cooking liquid, adding it 1/4 cup at a time as needed to moisten. Season with the salt and pepper; stir in the basil. Garnish with the fried capers and more parmesan, if desired.

Linguine With Shrimp and Pancetta image

Steps:

  • In a large pot of salted water, cook the pasta until just al dente. Drain and return to the pot.
  • Meanwhile, in a large skillet heat the olive oil over medium-high heat.
  • Add the pancetta and cook until golden brown, 5 minutes. Remove and set aside.
  • In same skillet add the shallots and cook, stirring, for 1 minute. Add the garlic and cook, stirring, for 30 seconds.
  • Add the wine, salt, red pepper, lemon juice, lemon zest, pancetta and shrimp. Bring mixture to a boil and cook about 4 to 5 minutes. Stir frequently. Shrimp should become pink and cooked through. DO NOT OVER COOK.
  • Add the parsley and stir to combine.
  • In a large bowl, combine pasta with shrimp mixture. Toss well to combine.
  • Add parmesan and toss well to thoroughly combine. Let set for 3 minutes until pasta absorbs all the liquid.
  • Garnish with parsley and serve immediately.

  • It’s most important to cook the three main ingredients (shrimp, pancetta, and pasta) right. The spaghetti needs to be perfectly al dente so start tasting it before the package suggests it should be done The shrimp, can’t be overcooked, or they’ll get rubbery. So I cook them quickly at the end. If you’re not comfortable with how long things will take, cook them separately, first, and then hold them off the heat to add back and then very end. The pancetta needs to be cooked well, to render out the fat. Again, I cook it separately, until it’s nice and crispy. That will concentrate the flavor and keep it from becoming soggy in the sauce. Finally, the sauce in this dish is a simple combination of wine and stock, reduced down and then enhanced with a bit of butter. Don’t skimp on either but keep the ratio about 50/50. You can reduce them down to thicken, and if needed add back a bit of pasta water if you need to thin it out
