Steps:
- Preheat oven to 350 degrees and line two baking sheets with parchment paper.
- Mix everything together, and scoop out lumps of batter using a a scant 1/4 cup measure.
- Place the cookies about an inch apart, and bake for 14 - 18
- minutes. Edges should just barely be turning brown.
- Let the cookies cool on the cookie sheet for about 10 minutes before transferring them to a cooling rack.

WHOLE GRAIN 'STEEL-CUT' OATMEAL COOKIES
I just recently started eating Coach's 'steel-cut, cracked and toasted' Oats and it's got me hooked. It's nutty and full of flavor. The original recipe from the package the brown sugar is packed and the table salt is regular salt. Please note that I'm not sure how this will work with regular oatmeal. The number of cookies will depend on the size you make them. Okay, I bought another brand of 'steel-cut' oatmeal to see if there was a difference. There was enough difference in the texture, flavor, cook-time and overall quality (to me) that I recommend you use the Coach's brand for this recipe.

Steps:
- Preheat oven to 375 degrees.
- Cream butter.
- Add both sugars, salt, baking powder, baking soda, eggs, vanilla, cinnamon and half the flour. Beat to combine.
- Beat in the remaining flour.
- Add oats, pecans and cranraisins.
- Drop by rounded teaspoon on ungreased cookie sheet.
- Bake at 375 degrees for 12-15 minutes or until edges are golden brown. Cool on wire rack.

- Combine dry ingreadients in a large mixing bowl.
- Combine wet ingredients in another bowl.
- Add wet ingredients to dry ingredients. Mix until well blended.
- Pour 1/4-cup batter onto a hot, lightly greased griddle for each pancake. Cook until golden brown on each side.

- Mix together weet-bix, rolled oats, flour, sugar, chocolate and apricots until well combined.
- Place margarine and golden syrup in a small saucepan and heat gently until melted.
- Mix bicarbonate of soda and water together then pour into margarine mixture. Add to dry ingredients and stir to combine.
- Place tablespoons of mixture onto baking trays lined with baking paper. Bake at 160 degrees C for 15-20 minutes. Cool on trays before serving.
- If you prefer your cookies chewy, cook them for 15 minutes. For crunchier cookies, leave them in the oven for 20 minutes.

- Preheat oven to 375°F.
- In a small bowl, combine flour, nutmeg, cinnamon, cloves, salt, and baking soda; set aside.
- In a large bowl, cream butter, brown sugar, and granulated sugar.
- Add egg, milk, and vanilla; mix well.
- Slowly add dry ingredients mixing well after each addition.
- Stir in oatmeal and unprocessed bran.
- Add raisins if desired.

STOVETOP STEEL CUT OATS
A friend of mine has been purchasing steel cut oats in bulk from the Amish in our area and sharing! Since I didn't know how to prepare them, I found a similar recipe online and adapted it to my taste. *Note-you can use 4 cups of water and omit the milk. The milk makes it creamier.

- Bring the water to a boil in a large pot. Add the steel cut oats and and salt. Stir.
- Reduce the heat to medium low and cook for 30 minutes. Make sure you stir the oats occasionally so they don't stick to the pan.
- When the oats start to thicken, at about 30 minutes, add in the milk and extract. I think the milk makes the oats creamier. Stir the oats, milk, and extract together and cook for ten more minutes.
- Add in cinnamon and raisins or whatever toppings you wish.
- (If you want to make bruleed oats-put the oats in a bowl, sprinkle with brown sugar and turbinado sugar. With a creme brulee torch, fire the top of the oats until the sugar is crystalized).
- Serve the oats hot. This batch makes 4-6 servings. If you want you can let the oats cool and then portion them out into smaller containers. To reheat, add a splash of milk and reheat in the microwave for 1-2 minutes.
