WHOLE WHEAT APPLE SNACK BARS
Quick and easy, wholesome snack bars are easy to take to work or to pack in the kids' lunches.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C). Grease a 7-inch square baking tin, or line with paper liners.
- Whisk brown sugar, applesauce, oil, eggs, and vanilla extract together in a large bowl.
- Combine flour, cinnamon, and baking powder in a separate bowl. Stir into egg mixture until moistened.
- Spoon 1/2 the batter into the prepared baking tin and spread evenly. Place apple slices on top and cover with remaining batter.
- Bake in the preheated oven until the top springs back lightly when pressed, about 30 minutes. Remove from the oven and let cool completely before removing from the tin and cutting into bars, about 30 minutes.

WHOLE-WHEAT APPLE PANCAKES
Steps:
- Preheat the oven to 250. Put the apple in a microwave-safe bowl and tightly cover with plastic wrap; microwave on high until softened, about 2 minutes.
- In a large bowl, whisk the flours, baking powder, baking soda and salt. In a small bowl, whisk the buttermilk, nonfat milk, eggs and honey, then slowly add the dry ingredients, stirring until just combined.
- Heat a large nonstick griddle or skillet over medium heat. Spoon 1/4 cup batter onto the griddle for each pancake and sprinkle each with apple, then drizzle a little more batter over the apple. Cook until the tops are bubbly and the edges are dry, about 2 minutes. Flip and cook until golden brown, 1 to 2 more minutes. Keep the pancakes warm on a baking sheet in the oven while making the rest.
- Place 2 pancakes on each plate. Drizzle with the syrup.

APPLE PIE BARS
Steps:
- Preheat the oven to 375 degrees.
- For the crust, place the butter, granulated sugar, brown sugar, and vanilla in the bowl of an electric mixer fitted with the paddle attachment and beat on medium speed for 2 minutes, until light and creamy. Sift the flour and salt together and, with the mixer on low, slowly add to the butter-sugar mixture, beating until combined. Scatter two-thirds of the dough in clumps in a 9 x 13-inch baking pan and press it lightly with floured hands on the bottom and 1/2 inch up the sides. Refrigerate for 20 minutes. Bake for 18 to 20 minutes, until the crust is golden brown, and set aside to cool.
- Meanwhile, put the mixing bowl with the remaining dough back on the mixer, add the walnuts and cinnamon, and mix on low speed to combine. Set aside.
- Reduce the oven to 350 degrees.
- For the filling, combine the Granny Smith and Golden Delicious apples and lemon juice in a very large bowl. Add the granulated sugar, cinnamon, and nutmeg and mix well. Melt the butter in a large (10-inch-diameter) pot, add the apples, and simmer over medium to medium-low heat, stirring often, for 12 to 15 minutes, until the apples are tender and the liquid has mostly evaporated. Spread the apples evenly over the crust, leaving a 1/2-inch border.
- Pinch medium pieces of the remaining dough with your fingers and drop them evenly on top of the apples (they will not be covered). Bake for 25 to 30 minutes, until the topping is browned. Cool completely and cut into bars.
APPLE WALNUT BARS

- In a large bowl, cream butter and sugar until light and fluffy. Beat in egg. Combine the flour, baking powder, baking soda and cinnamon; gradually add to the creamed mixture, just until combined. Stir in apple and walnuts., Pour into a greased 8-in. square baking dish. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch pan.
- Combine oats, whole wheat flour, brown sugar, wheat germ, cinnamon, and salt in a bowl. Stir in honey, applesauce, egg, and vanilla extract. Stir in walnuts and cranberries. Mix until all ingredients are combined evenly and coated. Press into the prepared pan and flatten until even.
- Bake in the preheated oven until edges are golden brown, 20 to 30 minutes.
- Remove from the oven and place on a wire cooling rack for 20 minutes. Cut into bars. Gently flip the pan over; bars will come out if pan was properly greased.
