EASY WHOLE WHEAT BANANA MUFFINS

Very easy, moist banana muffins. Great basic recipe that you can change by adding nuts, chocolate chips, or raisins.

Easy Whole Wheat Banana Muffins image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix bananas, salad dressing, and sugar in a large bowl until smooth. Stir flour, baking soda, and salt into banana mixture until batter is just moistened. Divide batter evenly into 24 muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 17 minutes.

Butterscotch Banana Muffins image

Steps:

  • Combine dry ingredients, including oatmeal and mix well.
  • In a separate bowl, combine the banana, egg, milk, oil and flavoring and blend well.
  • Add the wet ingredients to the dry ingredients and stir until just moistened.
  • Add the butterscotch chips.
  • Spoon batter into a well greased or lined muffin tin filling 3/4 full.
  • Bake at 400 degrees for 14-16 minutes.
  • Remove from pan and cool on a wire rack.

Steps:

  • Preheat oven to 400F degrees. Grease muffin pans; set aside.
  • In a large bowl, combine first 8 ingredients (flour through sugar); make a well in the center of mixture. Set aside.
  • In a medium bowl, combine banana, egg, milk, oil, and extracts. Beat with a wire whisk until well blended. Add to dry ingredients, stirring until just moistened. Fold in butterscotch chips.
  • Spoon batter into greased muffin cups, filling each cup 3/4 full. Bake for 13 to 15 minutes, or until a wooden pick inserted in center of muffin comes out clean. Remove muffins from pans immediately and cool on a wire rack.

  • Preheat your oven to 220C / 425F / Gas mark 7 and prep a 12 hole muffin pan by very lightly greasing it.
  • In a large mixing bowl add in the flours, baking powder, salt and ground cinnamon. Give them a gentle mix to combine them.
  • In a large jug or another mixing bowl pour in the sugar, eggs, buttermilk, vegetable oil, vanilla extract and mashed bananas. Mix everything until you have a pale looking liquid.
  • Pour the liquid ingredients into the bowl of dry ingredients and with a gentle hand combine them. It's okay if the mixture looks a bit lumpy still.

  • Spoon the batter into liners, filling them all the way to the top. Top with oats and a light sprinkle of coconut sugar, if desired. Bake for 5 minutes at 425 then, keeping the muffins in the oven, reduce the oven temperature to 350°F (177°C). Bake for an additional 16-17 minutes or until a toothpick inserted in the center comes out clean. The total time these muffins take in the oven is about 22-23 minutes, give or take. (For mini muffins, bake 11-13 minutes at 350°F (177°C) the whole time.) Allow the muffins to cool for 5 minutes in the muffin pan, then transfer to a wire rack to continue cooling.
  • Muffins stay fresh covered at room temperature for a few days, then transfer to the fridge for up to 1 week.
