ORANGE-WILD RICE SALAD WITH SMOKED TURKEY

Orange-Wild Rice Salad with Smoked Turkey image

Steps:

  • Cook wild rice according to package directions. Transfer to a large bowl; cool completely., Add turkey, oranges, celery and cherries to cooled rice. In a small bowl, whisk dressing ingredients. Pour over salad; toss to coat. Refrigerate, covered, until cold.

1/2 pound deli smoked turkey, cubed (about 1-3/4 cups)
1 cup orange sections
1 celery rib, chopped
1/3 cup dried cherries
DRESSING:
6 tablespoons orange juice
2 tablespoons lemon juice
1 tablespoon Dijon mustard
1-1/2 teaspoons olive oil
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper

Wild Rice Salad with Blood Oranges image

Steps:

  • Cook wild rice in a large pot of salted boiling water until just tender, about 40 minutes. Drain in a colander.
  • Meanwhile, cut away peel and pith from oranges; holding oranges over a bowl to catch the juice, remove segments from white membrane; place segments in the bowl.
  • Combine vinegars, 1 1/2 teaspoons salt, and pepper in a bowl. Slowly whisk in olive oil.
  • In a large serving bowl, combine rice, scallions, dried cranberries, parsley, and orange sections and their juice. Drizzle vinaigrette over the salad, gently toss, season, and serve.

3 cups wild rice

4 blood oranges, or navel oranges
3 tablespoons red-wine vinegar
3 tablespoons sherry vinegar
1 teaspoon freshly ground black pepper
1/2 cup extra-virgin olive oil
6 scallions, cut into 1/8-inch rounds
1 cup dried cranberries
1 bunch flat-leaf parsley leaves, finely chopped (1/2 cup)

Wild Rice Salad image

Steps:

  • Place the wild rice in a medium pot with 4 cups of water and 2 teaspoons of salt and bring to a boil. Simmer uncovered for 50 to 60 minutes, until the rice is very tender. Drain well and place the rice back in the pot. Cover and allow to steam for 10 minutes. While the rice is still warm, place it in a mixing bowl. Peel the oranges with a sharp knife, removing all the white pith. Cut between the membranes and add the orange sections to the bowl with the rice. Add the olive oil, orange juice, raspberry vinegar, grapes, pecans, cranberries, scallions, 1/2 teaspoon of salt, and the pepper. Allow to sit for 30 minutes for the flavors to blend. Taste for seasonings and serve at room temperature.

Orange-Pistachio Wild Rice Salad image

Steps:

  • Combine brown rice, wild rice and chicken broth in a saucepan and bring to a boil. Cover, reduce heat to a simmer and cook until all water is evaporated and rice is fully cooked, about 45 to 55 minutes. Remove from heat and cool completely.
  • When rice is cool, add orange slices, basil, red onion, pistachios and orange zest; mix to incorporate.
  • For the dressing:
  • Combine the red wine vinegar, olive oil, orange juice, mustard, honey and salt in a metal bowl and whisk to incorporate.
  • Pour over rice mixture and toss to incorporate.

Steps:

  • Cook rice according to package directions, omitting salt or substituting seasoned salt if desired. Drain well; cool to room temperature. Spoon into a large bowl; add chicken, grapes, water chestnuts and mayonnaise. Toss gently with a fork. Cover and chill., Just before serving, add cashews if desired. Serve on lettuce leaves or line a bowl with lettuce leaves and fill with salad.
