THE BEST ALL PURPOSE DEEP FRY BATTER

We dont deep-fry a lot but when we do..we do a WHACK of stuff. I've tried numerous recipes and this by far is the cheapest, tastiest and works with everything. Fish and onion rings are phenomenol. Spices are to your own taste and can be adjusted to whatever taste you want. Believe me...I've added everything from curry to southwestern tastes, this 'basic' recipe is just a guideline to the spices and taste you are looking for. ENJOY, it's awesome.

The Best All Purpose Deep Fry Batter image

Steps:

  • Mix all dry ingredients, except the extra flour, whisk together.
  • Add beer and only mix lightly.
  • DO NOT over mix. If there are flour lumps just squish with the back of a spoon.
  • You want the mix to be blended but not overmixed as it will not 'puff up' when deep-frying.
  • For fish,shrimp, and 'meaty or wet' items I usually towel dry them and dredge them in the additional flour.
  • Then dip and cover in mixture. Let the excess drip off and when putting any item in the deep fryer -- use tongs.and dip whatever you are deep frying in the oil for about 10 seconds, then release.
  • This prevents the food from sticking to the bottom of the fryer. (Took us a while to learn that technique).
  • When it comes to fish or something long or big -- I just put the first inch or 2 in and let it bubble for a few seconds so that I know it won't sink to the bottom and stick. (I truly hated that with deep frying).

1 tablespoon salt
1 tablespoon pepper
2 tablespoons garlic powder
2 tablespoons Mrs. Dash table blend seasoning
1 cup extra flour (for dredging)

UNBELIEVABLE FISH BATTER

In the early 1950's, I received this recipe on an open-line, talk-radio show. It makes the lightest, crispiest batter imaginable. This makes enough to coat approximately 2 pounds of fish.

  • Stir oil into the flour.
  • Add milk and egg, whipping with whisk until smooth.
  • Mixture should have the consistency of heavy cream. If it is too thick, add milk one tablespoon at a time until until it "looks right".
  • The perfect breading with this batter is cracker meal. Just whirl the crackers in your processor until it is very fine.

Golden beer-battered fish with chips image

Steps:

  • Combine the flour, cornflour, baking powder and turmeric in a large bowl, season, then spoon 1 tbsp onto a plate and set aside. Gradually pour the beer and water into the bowl, stirring with a wooden spoon until you have a smooth, lump-free batter. Leave to rest for 30 mins while you prepare the chips.
  • Heat oven to 200C/fan 180C/gas 6. Boil a large pan of water, then add the chipped potatoes and boil for 2-3 mins until the outsides are just tender but not soft. drain well, then tip onto a large baking tray with the flour, oil and some salt. Gently toss together until all the potatoes are evenly coated and the flour is no longer dusty. Roast for 30 mins, turning occasionally, until the chips are golden and crisp.
  • To cook the fish, heat the 1 litre oil in a deep saucepan until a drop of batter sizzles and crisps up straight away. Pat the fish dry with kitchen paper, then toss it in the reserved turmeric flour mix. Shake off any excess, then dip into the batter. Carefully lower each fillet into the hot oil and fry for 6-8 mins - depending on the thickness of the fish - until golden and crisp. Using a large slotted spoon, lift out the fish, drain on kitchen paper, then sprinkle with salt. Serve with the hot chips and Homemade tomato sauce (see 'goes well with').

QUINOA-BATTER FISH FRY

Missing those fried fish tacos you had that one time at a shabby little beach restaurant in Southern California? Or the fish-and-chips from the chipper? Yeah, me too. The nice thing about this recipe is you can fry up a batch easily-no deep-fat fryer required. The batter is made with quinoa flour and gets added texture and crispness from toasted quinoa. Serve the fish as a main dish with whatever side you life, douse it in malt vinegar, or satisfy that California craving and use it to make tacos.

Quinoa-Batter Fish Fry image

Steps:

  • 1. Season the fish with salt and pepper. In a large bowl, whisk together the quinoa flour, toasted quinoa, baking powder, cornstarch, and 1/2 teaspoon salt. Whisk in the club soda to make a batter. The consistency will be thick and it should cling to the fish, but it may dry out as it rests, in which case, whisk in a little more club soda.
  • 2. Line a large plate with 2 layers of paper towels. Add enough oil to a large skillet to reach 1 inch/2.5 centimeters up the sides of the skillet and heat over medium-high heat until shimmering.
  • 3. Dip each piece of fish, one at a time, in the batter and add to the skillet. Cook until deep golden and crusty on both sides, about 10 minutes total. You can add a few pieces of fish to the skillet, but avoid overcrowding.
  • 4. Transfer the cooked fish to the prepared plate and repeat with the remaining fish. Add more oil if needed, allowing it to heat prior to adding more fish. Serve hot with lemon wedges, lime wedges, or malt vinegar.

Steps:

  • Take a large mixing bowl and add the flour and ½ tsp fine salt. Whisk together to incorporate the salt. Add the water and whisk until the batter is completely smooth and the flour is fully combined.
  • Take the oil and pour into a large, sturdy saucepan with high sides. Heat over a high heat until it reaches 200C. To fry your ingredients, dip them in the batter, allowing any excess to run off, and carefully place into the hot oil. Fry until the batter is a rich, golden brown and crisp. The fried ingredients will likely float on top of the oil when cooked, too. Remove from the oil using a slotted spoon and blot on kitchen towel before serving. Sprinkle with a little flaky sea salt to keep crisp. The batter does not keep well and is best made just before using.

  • Mix eggs and flour together, then thin with water to a consistency just thick enough to adhere to the food you intend to fry.
