WINTER FRUIT SALAD

This is a perfect fruit salad to prepare all winter long! It's pretty enough to serve as a dessert, yet satisfying enough to enjoy as a snack.

Steps:

  • Drain pineapple and set juice and pineapple aside. In a saucepan, combine pudding mix and reserved pineapple juice. Cook and stir over medium heat until thickened. Transfer to a bowl and cool. , Fold in fruit, nuts, coconut and reserved pineapple. Chill until serving. Garnish with whipped topping if desired.

1 can (20 ounces) unsweetened pineapple chunks
1 package (3 ounces) cook-and-serve vanilla pudding mix
1 quart mixed fresh fruit chunks (apples, bananas, oranges, pears)
3/4 cup chopped pecans or walnuts
1/3 cup sweetened shredded coconut
Whipped topping, optional

This recipe comes from my Weight Watchers Magazine, November/December 2008. This issue has several "make ahead recipes" for easy Holiday planning. To make ahead: Cover and refrigerate the salad up to 2 hours in advance, but don't sprinkle it with the almonds until just before serving." 2 points for 1 1/4 cup.

Steps:

  • Combine the brown sugar, lemon zest, lemon juice and allspice in a large bowl.
  • Add the apples, pineapple, pears and currants.
  • Toss to coat.
  • Sprinkle with the almonds.

2 tablespoons lemon juice
1 teaspoon ground allspice
3 braeburn apples, sliced
3 cups pineapple, fresh, cubed
2 bosc pears, sliced
1/3 cup currants
1/4 cup almonds, sliced

Steps:

  • Combine the sugar, 2 cups water, the ginger and vanilla seeds and pod in a saucepan. Use a vegetable peeler to remove wide strips of zest from the lemon and 1 orange, add to the saucepan and bring to a boil over medium-high heat. Reduce the heat and simmer 5 minutes. Refrigerate until cold.
  • Meanwhile, peel the remaining oranges with a paring knife, cutting along the natural curve of the fruit. Hold an orange over a large bowl and cut along both sides of each membrane to free the segments, letting them fall into the bowl. Squeeze each empty membrane to release the juices. Repeat with the remaining oranges. Add the mangoes, bananas, kiwis, kumquats and pomegranate seeds and gently toss. Pour the syrup over the fruit and chill overnight.
  • Before serving, remove the citrus zest, ginger and vanilla pod. Spoon the fruit and syrup into bowls.
  • To remove pomegranate seeds, cut the fruit into quarters, then break apart in a bowl of water. Skim off the pith that floats to the top and drain the seeds.

Steps:

  • Drain pineapple, reserving 3/4 cup juice.
  • In a saucepan, combine sugar and cornstarch. Add pineapple juice, orange juice and lemon juice. Cook and stir over medium heat until thickened and bubbly; cook and stir 1 minute longer. Remove from the heat; set aside.
  • In a bowl, combine pineapple chunks, oranges, apples and bananas. Pour warm sauce over the fruit; stir gently to coat.
  • Cover and refrigerate.

  • Put sugar in a medium-size saucepan; add water. Scrape seeds from vanilla bean with a thin knife into pan; add vanilla pod to pan.
  • Using a vegetable peeler, remove zest from lemon in long strips (avoiding as much of the white pith as possible); add to pan with 1 Tbsp lemon juice. Bring mixture to a boil over high heat; reduce heat to medium and simmer, uncovered until a light, fragrant syrup forms. Remove syrup from heat; refrigerate until cool.
  • Place clementines, pineapple, kiwi and pomegranate seeds in a large serving bowl. Remove lemon zest from syrup; pour syrup over fruit (leave vanilla bean in to continue to impart flavor) and toss to coat. Cover; refrigerate, 30 minutes.
