ROAST DUCK

Steps:

  • A day before roasting, remove the giblets and neck from the cavity of the bird and discard. If necessary pluck any stray pinfeathers off the duck with tweezers. Trim the neck flap and excess fat from around the cavity. Rinse and dry the bird well. Set the duck on a rack on a baking sheet, and refrigerate, uncovered, for 24 hours.
  • Heat the oven to 300 degrees F. Pierce the duck's skin all over (including the back), every 1/2-inch, with a skewer or small knife. Season the cavity with salt and pepper and stuff with 3 strips of the orange zest and the onion. Set the duck on a rack in a roasting pan, and pour a cup of water in the pan. Roast the bird for 3 hours, removing the duck from the oven every hour to prick the skin again.
  • Meanwhile, make the glaze: Combine the remaining orange zest, molasses, honey, coriander, pepper, orange juice, vinegar, and garlic in a small saucepan. Heat, stirring, over medium-high heat until warm. Remove glaze from the heat and set it aside at room temperature while the duck cooks.
  • Remove the duck from the oven and carefully, pour off the excess fat from the pan. (If desired reserve this fat for frying potatoes or wilting greens.) Raise the oven temperature to 450 degree F. Return the duck to the oven and roast until crisp and brown, about 30 minutes more.
  • Let the duck rest at room temperature for 10 minutes before carving. Brush the duck's skin with glaze 4 to 5 five times during the resting period. Carve the duck and transfer pieces to warm serving platter. Serve the remaining glaze at the table to drizzle over the duck, if desired.

1 Pekin duckling (Long Island), about 5 pounds
Six 1 by 3-inch strips orange zest
1 small onion, halved
Kosher salt and freshly ground black pepper
1 1/2 tablespoons unsulfured molasses
1 1/2 tablespoons honey
1/4 teaspoon coriander seeds, lightly crushed
8 whole black peppercorns, lightly crushed
2 tablespoons fresh orange juice
2 tablespoons balsamic vinegar
2 large garlic cloves, crushed and peeled

TEA SMOKED DUCK

Tea Smoked Duck is one of the most famous dishes of Sichuan Province, contrary to what most people believe it to originate from Hunan. Smoking was a culinary craft mastered by the Sichuan people as a better way to preserve flavor and the longevity of foods without refrigeration. A good tea smoked duck should have a haunting tea smoked flavor, well rendered, tender meat and a crackling skin. It can be served with buns and accompanied by a semisweet bean sauce.

Steps:

  • Combine all the ingredients, except sesame/vegetable oil, for the marinade in a bath solution and place cleaned duck in it overnight.
  • Hang dry and rest for at least 2 hours. Hang duck in smoking oven with hook on the upper neck.
  • Place the camphor wood, brown sugar, tea twigs, if available, on a pan at the base of the oven and heat oven to 350 degrees F. Some recipes call for tea leaves but tea leaves in the sugar/camphor mixture does not add that much tea flavor to the ducks. Roast the duck for approximately 40 minutes, but depends on size of duck, type of oven, etc. For best results for a crispy skin, the last 5 to 10 minutes should be at 400 degrees F, with a final basting of sesame/vegetable oil on the skin of the duck. Duck can be flashed in hot oil to finish, if timing for service is critical.
  • Cut and serve hot, with buns and sauce, optional.

1 whole cleaned duck (preferably Peking where the breasts are larger)
1 large piece ginger root, crushed
1 bunch spring onions
1 tablespoon ground cloves
1 (6-inch) piece cassia cinnamon, preferably Chinese
1 Sichuan red peppercorns
1/2 cup maltose sugar or honey
1/4 cup kosher salt
1 cup fine Chinese black tea (Darjeeling, Ceylon are fine substitutes)
1 tablespoon saltpeter (optional but in original recipes)
Water, enough to just cover duck in bath
Sesame /vegetable oil, for basting
1 pound of camphor wood (chips are fine) Other types of wood such almond can be used)
1 cup brown sugar
1 bag dried tea twigs, optional

Steps:

  • For the Filling: After soaking rice overnight, drain out excess water. Steam, covered, over light heat until soft. Boil skinless chestnut in water until soft. In a large pan, saute shallots, ginger, Chinese sausage, and prosciutto, until shallots are soft and translucent. Add all remaining ingredients and spices. Mix well, making sure not to break the chestnuts. Stuff the duck. Sew back up tightly, wrap with string in 3 or 4 places.
  • For the Marinade for the Duck: Mix all ingredients very well together.
  • For the Duck: Pour boiling water over the entire duck. Remove and dry the duck. Rub the marinade into the skin and marinate 45 minutes turning frequently.
  • To deep fry the duck, remove it from the marinade. Deep-fry in vegetable oil at 350 degrees F until golden brown.
  • For the Wine and herb mixture, for steaming: Combine all ingredients in a large bowl.
  • When duck is golden brown remove it from hot oil submerge it in the wine and herb mixture. Place the whole vessel, duck and wine into steamer. Then steam for 2 hours in a covered pan. Serve with winter melon.

1 (4 pound) duck, split down the back bone (leave drumstick bone in)

3 cloves
2 bulbs fresh garlic (skin off but broken, deep-fried until golden brown)
1/2 bottle rice wine
1/2 bottle Far Dill wine (or first press rice wine)
1/2 bottle red wine

Make sure that you are cutting through just the skin and not the meat.

  • If using a frozen duck, be sure to thaw your duck for 2-3 days in the refrigerator before preparing. Once your duck is completely thawed, remove the giblets and neck as well as any packaged orange sauce that may be in the body cavity. Rinse with cold water then pat completely dry with paper towels. Set the duck out for 30 minutes to warm to room temperature.
  • Use a sharp knife or the tines of a fork to pierce the duck skin in small slits or crosses (in a diamond pattern). *Do this carefully, as you don't want to pierce the duck meat! Lift the skin away to help avoid peircing the meat.For a great even cook on your duck, there are two things to note. 1) It is best not to stuff the body cavity with onion or citrus for flavor. This reduces the air flow and adds cooking time. 2) If you're not worried about the presentation or tying the legs crossed, you can make slits into the leg joints between the body and the thigh to ensure that the duck cooks quickly and evenly.
  • Grind your fennel seeds if needed, then blend all of the seasoning mix ingredients: salt, pepper, cinnamon, fennel. Rub onto all surfaces of the duck skin.
