WW CHOCOLATE FUDGE COOKIE BITES

These have been created for the Weight Watchers Plan but they do not contain any wierd ingredients so they can be enjoyed by all! If you are following the plan, One point per cookie.

Steps:

  • Preheat oven to 375*.
  • Coat two nonstick cookie sheets with cooking spray.
  • Place cocoa, margarine and sugar in a medium bowl.
  • Beat with an electric mixer.
  • Add applesauce and vanilla.
  • Beat to blend.
  • In another small bowl, stir together flour, baking powder and salt.
  • Stir flour mixture into cocoa batter and mix well.
  • Shape dough into 48 marble size balls.
  • Place 1 inch apart on cookie sheets.
  • Bake until set, about 8 minutes.
  • Remove from oven and allow cookies to stand for one minute.
  • Remove to wire rack and cool.
  • Sprinkle with powdered sugar.
  • Store extra cookies (if there are any!) in freezer safe containers to maintain freshness.

Steps:

  • Mix together flour and baking powder and set aside.
  • Bring a pan of water to a boil and remove from heat. Combine chocolate and butter in a heat proof bowl and set over pan of water, stirring occasionally until melted.
  • In a large bowl, whisk eggs with salt , then whisk in both sugars. Whisk in chocolate mixture, then rum.
  • Stir in flour to form a soft dough. Scrape dough onto a piece of plastic wrap and wrap tightly. Chill 2 hours.
  • Set racks in upper and lower thirds of the oven and preheat to 350 degrees. Flour your hands and rool the chilled dough into 2-teaspoon balls. They don't have to be too neat. Roll each ball in confectioners' sugar. Arrange well apart on prepared pans and bake about 12 minutes. cool pans on a rack before removing cookies from pan

8 tablespoon (1 stick) unsalted butter

1 cup firmly packed dark brown sugar
1 cup granulated sugar
1 tablespoon dark rum
Confectioners' sugar
Several cookies sheets or jelly-roll pans lined with parchment or foil

  • Arrange oven racks with one in lower third of oven and one in upper third of oven. Preheat oven to 350°F. Line two large baking sheets with parchment paper.
  • In a medium bowl, whisk together flour and cocoa and set aside. In a large bowl, combine sugar, applesauce, oil, vanilla, and egg. Beat with an electric mixer at medium speed until smooth, about 1 minute. Add flour mixture to large bowl and stir until fully combined. Scoop dough by level tablespoonfuls and roll into balls. Arrange 12 dough balls on each baking sheet.
  • Bake cookies at 350°F until set, 8 to 10 minutes, rotating baking sheets halfway through. Cool cookies on pans for 2 minutes. Remove cookies to wire racks to cool completely. Repeat process with remaining dough. Sprinkle cookies with powdered sugar.
